Summer Squash Bread

I really loved this! I used others' suggestions: I did 1/2 cup applesauce, 1/2 cup oil, did 3/4 cup splenda, 1 cup sugar (I think), only added a few shakes of nutmeg b/c I thought it'd be overpowering, and sprinkled brown sugar on the top. Yummy!!! I had to bake longer since I did in two loaves and they were deeper than a 9x13 pan. Thanks for a great recipe!!

Chicken Tetrazzini IV

Okay....I am giving this 5 stars b/c I think the flavor is phenomenal but I did alter it a bit so maybe I should give it 4. Here's what I did: 1) I used a variety of pasta to use up what I had, it was still yummy 2) Roux- added more flour & a little less salt 3) Increased chicken broth to 1 1/2 cups (homemade), 1 cup skim milk + 1/2-1 cup (not sure exactly) evaporated milk in place of heavy cream, increased to 3 T sherry 4) Sauteed fresh mushrooms w/ garlic, onion, and olive oil 5) Mixed mushroom mixture, with rotisserie chicken, noodles, tossed in a little extra fresh asiago cheese... I was so excited for supper b/c it smelled and tasted phenomenal and super creamy.... Then I put in oven... Here's my biggest tip. It got a LOT drier once I baked it (and I even covered it after I saw that it was). It was still good but I was disappointed b/c the texture was PERFECT in the skillet. Soooo I would say if you are going to bake it, make more sauce and add more liquid. OR just eat it fresh from the skillet- that's how I'm making it next time. It was awesome that way. The oven dried it out a lot...and I prefer it creamier. But that's just me. A 5 for flavor for sure!!!!!!!!! Thanks for an awesome base recipe. :)

Fruit Pizza I

I thought this was great, very similar to the fruit pizza recipe I used to make, but fabulous. Since I was taking it to a gathering, I thought it less messy to make "tarts" out of it. I used mini tart muffin wrappers and sprayed with non-stick spray. I put a little glop of the crust mixture in the bottom and baked until done. I then put the next layer mixture on top (I added some vanilla pudding mix and used a little less sugar....I only had the dark vanilla so it got kinda dark and I wanted to lighten it up, hence the pudding mix- which actually tasted really yummy). I then cut up tiny pieces of fruit (kiwi, strawberries, raspberries, mandarin oranges) and put on each little tart. It was super handy and bite size, thus eliminating the mess. It worked out so nicely that it's going to be how I always make my fruit pizza now, much less mess!

Baked Pork Chops I

I was doubtful I would like this... but I actually loved it as did my husband. I followed suggestions from others & changed a few things on my own. 1. Did a garlic/herb rub, tenderized meat 2. Dipped in egg, then flour, then egg, then bread crumbs 3. Pan fried only a few minutes, not 5, just barely golden... 4. Baked covered alone for 20 minutes 5. Then added sauce and baked an additional 30 minutes My hubby raved about this, and loved the gravy with potatoes. Sauce changes I made: ~1 can cream of mushroom ~1 can cream of chicken ~1 cup milk ~sauteed onions with mushrooms in pork skillet w/ a little wine and butter ~Added wine to taste, maybe 1/3-1/2 cup? ~Heated up on stove Yummy!!! This is going on our regular rotation per request of the hubby. Thanks so much for a great recipe!! Contrary to other reviews, I didn't really think this was much work at all, I think I can actually make it fairly quickly the next time I make it. Excellent!

Easy and Delicious Chicken

My husband thought the sauce was decent but that there was way too much chicken in it. He praises most of what I make, and so when he says "it's okay" I usually don't make it again. I honestly didn't like the sauce...I tasted way too much cream cheese, and thought it was really salty for some reason (even though I used low-sodium chicken broth as well). I thought the sauce was too thick. Thanks to other reviewers, I doctored it a little and it turned out okay (I ended up adding mushrooms, garlic, onion, peppers, more pepper, milk after we tried it). Thanks, though, it was easy, and edible...good base recipe that you can tweak to your own likings. It sounds like everyone else really liked it. :)

Lemon Fish Bake

I typically hate fish, so I figure if it's pretty good to me, I'll give it a five. :) I used Italian breadcrumbs since I didn't have plain and I also added some garlic powder to the mix. I drizzled a little lemon juice over the fish along with some lemon pepper shake and bake. It turned out really well for fish! :) Thanks!

Chicken Fettuccini Alfredo

I rated this a five, because I felt the flavor was outstanding...I followed the recipe exactly except I put in less salt (I tend to do that especially with sauces, since I hate it when things are too salty and I can always add more) However, my sauce was way to thick to even really spoon over the fettucine, so I added extra milk to the mix (it still turned out quite thick). I think maybe next time I'd put in less flour since we like a medium thickness to our sauces. And I think I may try some other Italian cheeses next time as well. Excellent flavor, though, my husband loved it! Definitely a keeper!

Betsy's Mandarin Orange Salad

This is one of the best salads I've tried on this site-I loved it as did my husband. Surprisingly, I loved the almonds and I typically hate them. I didn't add the celery (personal preference), used green lettuce rather than red, and halved the entire recipe. As most salads of this sort (in my opinion), it doesn't necessarily keep very well so don't toss the dressing until you're almost ready to serve. Wonderful! Thanks! :)

Sour Cream Chops

I feel awful that I'm in the minority here, maybe I did something wrong, I was quite surprised that it didn't have more flavor than it did. Although my pork chops were nice and tender, I wasn't really impressed with the sauce. It may have been the cream of chicken, maybe the brand I used, I'm just not sure, I followed the recipe to a 'T' and thought I'd love it. My husband enjoyed it, but he will generally eat anything. :) Sorry that I'm in the minority! Maybe I'll try it again and see what happens.

Fried Rice with Cilantro

I thought this was very authentic tasting. I didn't have cilantro, and it still tasted wonderful, so I can only imagine that would improve the taste immensely. My husband was very impressed with it....and my kitchen smelled like downtown Bangkok, Thailand, for the next day or two (probably due to the fish sauce!) :) Next time I may decrease the amount of fish sauce just a little bit for personal preference, it was a perhaps a little overpowering for me personally (although my husband would disagree). I'm just not crazy about it, I hate the smell, but it's often necessary for many Asian dishes! :) Oh, and I also didn't have any green chili's so I used red Thai peppers. Great recipe!

Sausage Casserole

This was great! I used frozen shredded potatoes. I cooked the onion with the sausage since I don't like crunchy veggies. I used some colby jack along with chedder as I didn't quite have enough. I think I would also add some pepper and salt to the mix or some type of seasoning, as I felt it needed it afterwards. I might also add other veggies. Everyone enjoyed it! Thanks!

Belle and Chron's Spinach and Mushroom Quiche

This was really yummy....I sauteed the mushrooms and onions for a really short time to help eliminate crispiness based on other reviews. I decreased the ingredients as well because I knew it would be way to much for even my deep dish pie pan. I still had extra. I used a package of frozen spinach, and next time I think I will use less as it overwhelmed the quiche somewhat. I will definitely make again and tweak to our tastes! Thanks.

Chinese Chicken Salad II

I thought this was really good...I loved how easy it was to put together, I needed a really fast salad for a Chinese dinner I was putting together that used up ingredients that I had. Although I thought it was really good, my husband just thought it was "okay" so I probably won't make it again. But thank you, I thought it was great! :)

Betsy's Poppy Seed Chicken

I changed this quite a bit because I wasn't sure how it would taste without adding a little more flavor. I added some milk and wine to the sauce... sauteed the chicken breasts with onions, celery, garlic, and mushrooms (then added them to the sauce)...added some salt and pepper...used garlic ritz crackers, etc. All in all, it was pretty good, and easy....after all, it is canned soup. :) Thanks.

Saucy Chicken Cordon Bleu

We thought this was pretty good. I had to change the sauce quite a bit since mine turned out really thick initially, I added more wine and a little milk. (I ended up adding too much, and added flour to the sauce at the end to thicken it up a tad). The sauce was okay, but we both felt maybe it was unnecessary calories (wasn't incredible enough to warrant adding it). We both thought it was great, though, and I will probably make it again without the sauce for a more crispy traditional cordon bleu. Thanks for an interesting twist! :)

Purple Apple Slaw

We thought this was really good, and we're not huge coleslaw fans (I only made it because I had cabbage to use up and didn't know what else to make!) :) I did add extra apple (1/2 of a green one, personal preference) and a little more cabbage just based on how thick the dressing appeared. One thing to note-maybe this is obvious, but we ate it a few hours after it had been prepared, and the flavors hadn't blended quite as well as I would have liked yet. We both thought that it was much better today! (a day later) I may put a little less mayo in next time, but that's just personal preference. I also used plain green cabbage, and it tasted wonderful as well. Thanks for an easy recipe!

Sweet and Sour Pork III

I made this last night...nice and easy recipe. I used chicken instead of pork and pan fried it as well instead of deep fat frying it, and it turned out fine. Probably not as yummy as deep fat frying but a little healthier I guess! :) My husband loved it! Thanks for the great recipe!

Bourbon Street New York Strip Steak

We thought this was good, but not amazing. Maybe because we're not huge fans of bourbon, I don't know. The flavor was a bit much for us. We prefer the savory garlic marinated steak recipe on this site. But it's still a great marinade and it was nice trying something different. Thanks! :)

Mushroom Pork Chops

My husband loved this! I did make some changes based on reviews. I tenderized the chops, rubbed in seasonings & browned them in a skillet with oil. I sauteed onions w/ fresh garlic & then added them to the chops. I increased the soup to 2 cans & added white wine & milk (I really felt that gave it more flavor, thank you to the reviewer who recommended that!) I poured it over & also added fresh mushrooms (I didn't saute them simply because my husband brought them home with him). They turned out really well...I simmered it for a good 30-40 minutes. I made mashed potatoes with it, and used the leftover mushrooms and onion to saute with some green beans and garlic. The only thing I may try next time is a marinade before browning the chops to give them even more flavor. I gave it a 5 because it's a wonderful base recipe that can be tweaked to your liking, I'm not sure if I would have liked it as much without the changes, though. Great meal idea, super easy and adaptable, thank you! :)
