Mexican Chicken Corn Chowder

I made this soup for my family the other night and they loved it! I used 2 cans of chicken broth and creamed corn. I also added potatoes, carrots,corn kernels, 1 can fire roasted tomatoes, and chipotle chili powder. My family asked me to make this again tonight. This will be a staple this fall/winter.

Stuffed Mushrooms with Spinach

OMG!!! These were so good I made these as a test run for an upcoming halloween party. My neice and Idevoured them. I totally blew my WW points for the day. But anyway. I followed the recipe exactly except I used bacon peices instead of bacon slices and I only used 3 tablespoons of butter for sauteing the onions, garlic and mushroom peices. The next time, I'm going to lighten it up by using turkey bacon, low fat cheese, olive oil and fat free evaporated milk.

Black Bean and Corn Salad II

Made this for dinner last night, although it had a great flavor and my family loved it, I thought it was missing something. I left out the cilantro, I hate it. Maybe next time I'll use chopped jalapeno.

Downeast Maine Pumpkin Bread

I baked this in a bundt cake pan for 70 mins and it turned out great. I took it to work the next day and my coworkers raved about it. This recipe is a keeper!

Garlic and Ranch Turkey Burgers

I wanted to like this burger. It had a good taste but did not hold up very well. I did use some bread crumbs to hold this together like some other reviewers but it did not help. I ended up crumbling them up and adding a little water and taco seasoning to use to make tacos. The next time I will leave out the egg and use only 1 tbs of worstershire sauce then review it again.

Although this had a great flavor. It was a little too oily for me. Next time I will decrease the amount of oil and try the applesauce.

These cookies were pretty good. Instead of rolling in white sugar I rolled them in powdered sugar. That made them better to me. My family loved them.

Cracked Sugar Cookies I

These are by far the best homemade sugar cookies I have ever tasted. The next time I will try lemon extract instead of vanilla to give it a lemony flavor. *update* I had a sweet tooth and came across this recipe in my recipe box. I forgot how good these cookies are. They taste just like a brand named refridgerated sugar cookie dough.
