Mexican Chicken Corn Chowder
I made this soup for my family the other night and they loved it! I used 2 cans of chicken broth and creamed corn. I also added potatoes, carrots, corn kernels, 1 can fire roasted tomatoes, and chipotle chili powder. My family asked me to make this again tonight. This will be a staple this fall/winter.

Stuffed Mushrooms with Spinach
OMG!!! These were so good I made these as a test run for an upcoming halloween party. My neice and Idevoured them. I totally blew my WW points for the day. But anyway. I followed the recipe exactly except I used bacon peices instead of bacon slices and I only used 3 tablespoons of butter for sauteing the onions, garlic and mushroom peices. The next time, I'm going to lighten it up by using turkey bacon, low fat cheese, olive oil and fat free evaporated milk.

Black Bean and Corn Salad II
Made this for dinner last night, although it had a great flavor and my family loved it, I thought it was missing something. I left out the cilantro, I hate it. Maybe next time I'll use chopped jalapeno.
