Cathy's Banana Bread

Wonderful! This made exactly 5 mini loaf pans. I added 1 cup chopped walnuts, and like others, I used 1 c. white sugar and 1/3 c. brown. I added 1/2 tsp. cinnamon too.

Ida's Lemon Mousse

I dissolved the jello in only 2 cups boiling water, then mixed it with the frozen lemonade concentrate and chilled until it began to set (40 minutes or so?). Then I beat in the cool whip (in small amounts at first so it didn't get lumpy) and put it in a 9 x 13 pan in the freezer for about 10 minutes. While it was in the freezer,I pureed 3 cups fresh strawberries, then poured this in lines over the lemon mixture and swirled with a knife. Returned it to the freezer until firm. It was so yummy..tastes like strawberry lemonade!

Enchilada Stack

This is fast to make and so yummy....not too spicy, and my 5 year-old gobbled it up! I browned the ground beef, onion, etc. in the skillet and simmered w/the sauce for a couple of minutes before layering and microwaving. The tortillas are nice and soft, and you can adjust the seasonings to your taste.

Big Soft Ginger Cookies

These were soft and so wonderful. I doubled the recipe, and used half butter, half butter-flavored shortening (in place of the margarine.) I used the bottom of a cup to gently press each one down. These are going into my Christmas cookie collection!

Sausage & White Bean Soup

My husband loves this soup and requests it often! I add a couple of potatoes, peeled and diced, to the carrots, and omit the celery. Oh, and a couple cloves of minced garlic too. I also add a couple of handfuls of fresh spinach at the end, and grate fresh parmigiano reggiano cheese on top of each bowl before serving. Yummy with a good loaf of bread!!

Slow-Cooked Chili

This is an awesome recipe, but better with a few tweaks, I think. I browned the ground beef with 1 tsp cummin and 3 cloves minced garlic. (I omitted the green pepper). I added a full 14 oz. can tomato sauce and 1/2 can of pumpkin (the plain stuff, not pumpkin pie mix). It cooked on low for 9 hours and was sooo good with Fritos chips, sour cream and shredded cheddar cheese for toppings. My son even takes leftovers to school the next day in a thermos!

Melt-In-Your-Mouth Meat Loaf

This meatloaf is so moist and delicious. I didn't have any bread crumbs, so I used crushed saltine crackers instead and omitted the salt in the recipe. I also added some garlic powder and oregano. Definitely use a lean ground beef....I had to drain the grease off of mine. My family loved this, and it reheats well too.

Cinnamon Rolls III

I have made this recipe at least 5 times, and it always turns out great. Frosting Tip: I put the frosting into a baggie and snip a tiny hole in the end, then pipe it in circles (or however) onto the rolls....it seems less "goopy" that way. yum yum. :)

Cheddar Beef Enchiladas

This is a good family meal.....simple and tasty. I liked that it made two pans.....easier for me! I took the second pan of enchiladas to a friend and she said she and her husband really enjoyed them. I had frozen them, and so she followed the directions for thawing and heating them, and said they were good.

Chicken Noodle Stir-Fry

I used 2 packages of ramen noodles, and I felt there was still too much soy sauce. Next time I will either use teriyaki sauce or less soy. I also made this with frozen veggies (steamed first) and it worked well. With a few "tweaks," I'll make this again.

Cheesy Kielbasa Bake

This is good....I love that it makes two big pans. It is kind of like a lasagna casserole, with macaroni and sausage instead of lasagna noodles and ground beef/pork. My kids loved it, and because the carrot is grated, they didn't even know it was in there! Next time I will grate the zucchini, too...and maybe they won't pick it out. :)

Party Mimosa

I have to say, I was a little hesitant in trying this because it didn't have any reviews yet, but I'm glad I did. I made it for my Bunco group, since the dinner theme was "Easter Brunch." I doubled the recipe for 12 women, and it was almost all gone! I used apricot nectar instead of apricot-mango (my mistake, but it was still good). I also made a frozen ring in a bundt pan out of strawberries, pineapple and oj. Be sure to stir the punch after you add the champage, so that the flavors meld. Everyone said it had a nice flavor and wasn't too strong.

Orange Raisin Muffins

These are yummy....I used dried cranberries instead of raisins for a "cranberry orange" type of muffin. Keep an eye on the time....since the temp. is so high, mine didn't take as long to bake. Make sure you thoroughly grind the orange as the recipe states. :)

Peanut Crunch Cake

This cake is super! I made it for the teens at our church, and they described it as "a fluffy cookie." I used chocolate chips in place of the peanut butter chips, since the cake already has a peanut butter flavor. It's yummy!

Super Calzones

I give this recipe 4 stars for ease of preparation and taste. You can vary the ingredients per calzone to suit individual tastes. I prefer to use pizza sauce for dipping, or to add more seasonings to the tomato sauce. My 4-year old declared this "great!"

Honey Corn Bread

This is the most delicous homemade cornbread I have made! If you like it super sweet, I would suggest adding more sugar. I loved the texture...soft and not crumbly. I coated a stainless steel skillet with shortening and baked for less time.....about 20 minues or so, I think. My oven tends to run a little hot though. Very good recipe!

Banana Pudding IV

Yum. I used 2 small packages of cheesecake pudding mix because that's all I had.....it was sweet, but very good! I tossed a little lemon juice with the bananas as others suggested, and this worked well. I agree with others who said it is better after a few hours, so that the wafers can soften a bit. My husband, myself and his brother ate half the pan! So addicting!
