Andrew's Herb Risotto

Wonderful recipe! We just made this for dinner tonight, served alongside a hearty vegetarian meatloaf. This is a fantastic early fall recipe! For meat eaters, I could imagine this alongside halibut steak or a roasted chicken breast. I prepared this dish inside my stove top pressure cooker which shaved off some of the cooking/stirring time while preserving all the flavor! To do this, follow the recipe as written, omitting 1/2 cup liquid. Once the ingredients were combined, I sealed the pot, brought it to high pressure, lowered the heat to medium and cooked it for 5 minutes before releasing pressure and removing the lid. Really, so fast for such a great meal! Once the lid was off, I added the cheese, lemon juice, remaining zest and herbs, then seasoned to taste. Perfect risotto! I highly recommend this recipe! Great, fresh flavors balanced wonderfully! Cheers!

Vegetarian Shepherd's Pie

We're not fans of eggplant so we skipped it and substituted 2C cubed zucchini and 1C frozen grilled corn instead. Just to use it up, I threw in some leftover soy beef crumbles which added some texture. We also skipped the Parmesan cheese on top. This is such a good recipe and we're making it again today, in fact!

Creamy Vegan Corn Chowder

I try to follow recipes but it's so hard to do as I'm told. I added broccoli and cauliflower chopped very small at the same time as the carrots. Then I diced 2 red potatoes, cooked them separately and blended them slightly before adding them. As far as spices are concerned, I added some cayenne and bay leaves plus a dash or two of red wine vinegar for balance. The result was very very yummy and I didn't really need flour thanks to the potatoes. My b/f and I are veggie so I'll add some good bread and wine; It's dinner!

Vegan Goddess Dressing

Not only is this my new favorite salad dressing, it's good on faux turkey wraps on whole grain tortillas with fresh veggies. Creamy and light at the same time. Very fresh, clean taste.

Chicken Milano

I've made this several times for many people of all ages. Everyone loves it. I even poured this sauce over salmon and pasta for my son who couldn't stop eating it! This is a terrific sauce with mushrooms over garlic mashed potatoes too.
