Microwave Caramel Popcorn

Reviewed: Mar. 5, 2007
warning....do not make if you are looking for a little something to satisfy your sweet tooth...because you will eat way tooo much of this stuff. the beauty of this treat is how quickly it comes together and then wow.....pure delight to the taste buds. i had no trouble with preparing...only trouble is it is way addicting!!! before my husband and i knew it we had polished off the whole bowl. i will definately make again but not often...too fattening and too good.

DONA MARIA® Fish Tacos

Reviewed: Jun. 13, 2011
My husband loved these tacos!! I tweaked it a bit by using the incredible taco seasoning mix on this site(submitted by Bill Echols) in lieu of the spices listed . I also chopped some tomatoes and cilantro to add on the side. Very attractive as well. I recommend!

Glazed Peach Pie

Reviewed: Aug. 14, 2007
yum yum yum!!!!! this pie is so refreshing!!! i love the fact that it wasn't a jelly type glaze, rather just more peaches..(pureed) i think this pie beats marie calendar's fresh peach pie! i also think that substituting strawberries would also be very nice. i did reduce the sugar to 1/2 cup and in my opinion this dessert did not lack sweetness.i also recommend adding a tablespoon or so of vanilla and the same of cinnamon. very very good!!!

i was very pleased with my first attempt at homeade rolls. a few tips however...make sure to grease pan. my first batch wasn't and stuck to the pan. also...the yield indicates 16. i ended up with twice that amount. very very good recipe!!!

Cream of Pumpkin Soup

Reviewed: Oct. 28, 2008
there are not enough stars for this one!! i loved it!!! soo easy to whip up. i used my hand held emersion tool and didn't even have to take it out of the pot. the flavors are so warm and cozy. i did ease up on the whipping cream to save some calories. i think one could even get away with a non fat creamer in lieu of the cream and not sacrifice taste. loved it!!

Banana Bran Muffins

Reviewed: Aug. 28, 2006
this is a very nice muffin. the fact that it includes bran makes it especially nice for breakfast. i liked the flavor, very smooth and nutty.(i did add about 3/4 cup walnuts). i think that some added spices might have given this muffin the perfect 5. next time i might try adding some cinnamon and maybe even coconut.

Caprese Appetizer

Reviewed: Jul. 31, 2011
This was so lovely to bring to our summer get together. Everyone enjoyed. Like other reviewers I included a good balsamic vinegar in the mix. I found Pearl size mozzarella balls which were a bit smaller and adorable!! Easy to put together and made a really nice presentation. Very Good!!

Italian Sausage Soup

Reviewed: Jan. 20, 2010
What a hearty and satisfying soup!! The raves are worthy...i subbed italian sausage for chicken sausage, skipped the spinach and used tomato sauce (15 ounce) instead of stewed tomatoes. I also added quinoa which gave it a hearty texture. Fabulous!!

Creamy Chicken and Wild Rice Soup

Reviewed: Mar. 15, 2007
this is a really nice soup. i am giving it a 4 rating because i did tweak a bit to make more flavorful. i added about 1/4 cup of white wine and used fat free half and half to cut down on calories. i like the consistency of this soup. (nice and creamy and thick).

Seafood Enchiladas

Reviewed: Feb. 28, 2007
these are delectable!!! i found them a cinch to put together and were soooo good!!! very rich. the only substitution that i made was adding campbell's shrimp bisque soup (about 1/2 of can) to sauce mixture. i even used fat free half and half and low fat sour cream to keep calories down. you will love!!!

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 12, 2006
this is a very tasty gingerbread. like others, i have found it a bit sticky when rolling out the dough, but well worth the work. i use the butter frosting recipe on this site that you cook over the stovetop for a wonderful icing on the cookie. mmm.mmm.mmm.

Quinoa and Black Beans

Reviewed: Jan. 9, 2010
wonderful substitution for rice or couscous!! this had a nice southwestern taste to it...not too spicy but a little hot. i used about 19 ounces of black beans rather than the suggested 30 ounces.
