Chicago-Style Hot Dog

OF COURSE, there are tomatoes on Chicago Dogs. Ketchup, no. Tomatoes, yes. Until recent retirement to Tucson, the husband and I are life-long Chicagoans, and my brother has owned a pizza place and a hot dog stand in Chicago. Definitely, TOMATOES!!!!!

Nacho Potato Soup

This soup really is easy and fairly quick to make. It's tasty, smooth (broth) and a bit crunchy (corn). The consistency is good - not too thin, not too thick. I followed the recipe pretty closely, but used two cups of Pacific organic chicken broth instead of water and had to use half-and-half and organic frozen corn because that's what was in the 'frig. I used Velveeta Pepper Jack Cheese (again, because that's what I had), but regular Velveeta or the Mexican style would probably work well, too (check spiciness before you add any hot sauce). Added a little fresh cilantro rather than the parsley. The potatoes needed to be cooked a bit longer than stated, but otherwise this worked well. The old guy, who has never understood my fanaticism for cheese soup (Wisconsin Cheese Soup all summer and Caldo de Queso in AZ in the winter) had two helpings. Next time: sauteed onions and chopped ham!

Original Homemade Italian Beef

Good recipe. Not exactly like the famous Chicago Italian Beef, but good nonetheless. If the peppers are too spicy for your family, just add big chunks of green or red bell peppers the last hour or so of cooking instead. More authentic, anyway.

Chili Potato Burritos

The husband wants breakfast daily, so I'm always looking for new ideas. I've prepared these several ways for breakfast. Favorites are the mashed potatoes with chopped ham and lots of shredded pepper cheese, with eggs and refried beans on the side; we also like the potatoes cut into small chunks (instead of mashed) with black beans, corn, chopped jalapeno, canadian bacon or browned chorizo, with cooked scrambled eggs folded into the mixture. Serve with pieces of orange and grapefruit on the side and you've got a wonderful breakfast!
