Slow-Simmered Kidney Beans

Reviewed: Mar. 4, 2008
This was pretty good, but a little too sweet for me (and I cut down the sugar by a lot). It reminded me of hot dogs in baked beans. My fiance ate it once, but didn't want the leftovers. I felt the same way, the sweetness got old after a few bites. I think I would make it with tomato sauce next time, instead of ketchup and sugar. The kidney bean, kielbasa combo is classic though.

Pesto Polenta Lasagna

Reviewed: Mar. 4, 2008
I thought this was pretty good. I might brown the polenta first next time.

Pizza Dough I

Reviewed: Jan. 13, 2008
I thought this was ok, but heavy and dry for a pizza crust. I even added extra oil when I was spreading it out, and I brushed the crust with oil before baking. But, it ended up dry and cracked.

Refrigerator Rolls

Reviewed: Jan. 2, 2008
Delicious addition to our Thanksgiving meal. Super easy to make ahead. I recommend putting a damp towel over the bowl if refrigerating overnight. My rolls didn't rise that much before they baked, but they were still light and fluffy.

Apple Custard Tart

Reviewed: Dec. 30, 2007
Simple recipe with impressive look and taste. Filling made enough for two tarts. Served at a holiday dinner and everyone was impressed -- including me. We also ate one right out of the oven. It was delicious warm -- I liked it better. Chilled, the next day it was also very good.

White Chocolate Mousse Pie

Reviewed: Dec. 30, 2007
Tasty pie. I used a graham cracker crust, decorated with raspberries and drizzled with a raspberry syrup (from the extra raspberries). This pie did have a strong almond taste, as another review said, but I like almond, so it was good. It didn't set as well as I would have liked. It served more like whipped cream than pie. I don't think I'd make it again as a pie -- but I might make the whipped topping for something else. It was very tasty.

Avocado Quick Bread

Reviewed: Oct. 28, 2007
This was a delicious quick bread with a uniquely nutty flavor from the avocados. Very good toasted with a little butter. It is a more expensive quick bread than most, due to the cost of avocados (up to $2 each near me!). I would make this again for a treat.

Linguine with Portobello Mushrooms

Reviewed: Oct. 28, 2007
Delicious and easy recipe. I made it for a vegetarian crowd. There were no leftovers! I marinated my mushrooms in the dressing for a few hours before I broiled them.

Better Than Sex Cake II

Reviewed: Oct. 28, 2007
This was alright, but it didn't turn out as ooey-gooey as I expected. I think that the cake mix was too fluffy to have the desired effect. I might try it again using more sweetened condensed milk and a brownie mix or cake from scratch. Tres Leches cake is a delicious alternative. That would also be good with carmel and toffee!

Luscious Spinach Artichoke Dip

Reviewed: Oct. 28, 2007
A delicious, simple recipe for spinach artichoke dip. I used artichokes in water, not oil, frozen spinach and reduced fat cream cheese and sour cream. I had fresh Parmesan on hand, and substituted that for Romano. I might add more garlic next time, because I like a lot of garlic.

Easy Granola Bars

Reviewed: Oct. 28, 2007
What a find! I won't be buying granola bars with ingredients I can't pronounce any longer! This is a great base to which you may add whatever ingredients you wish. I tried lining the pan with wax paper for a non-fat and easy cleanup option but the bars stuck a little. Next time I'll try Reynolds wrap Release instead.

Seminary Muffins

Reviewed: Oct. 28, 2007
These are good, hearty muffins. I followed the recipe exactly, except omitted the walnuts and added some extra chocolate chips. If I made them again, I would decrease the amount of salt to either 1/2 tsp or 1 tsp, because they turned out too salty for my tastes. Great find!

Grilled Salmon with Avocado Dip

Reviewed: Dec. 20, 2005
I've made this salmon several times and it's always a hit. It's particularly good in the summer when done on the grill; the avocado dip tastes cool and fresh.
