Cake Mix Cookies VIII

What an easy and versatile recipe, not to mention inexpensive. This holiday season, I've made spice cookies with craisins and walnuts, chocolate with mint & dark chocolate chips, white with red and green m&m's, red velvet with white chocolate chips, and my favorite - yellow with chocolate chips. They're so moist and delicious, that I'm having trouble keeping enough around to give to others - we keep devouring them! ** A tip - before handling the dough, spray your hands with cooking spray - this way, the dough won't stick to your hands. You'll have to reapply the spray quite often though, because this dough is very sticky!

Mom's Potato Puffs

I used garlic-seasoned left over mashed potatoes which were very flavorful. After I added the flour (half the recommended amt), eggs, and baking powder, the potatoes lost a lot of the flavor though. I even added mozzerella cheese, but it was still on the bland side. I recommend adding quite a bit more seasonings than you normally would. Deep frying also made them heavier (greasier) than they needed to be. Next time I'll try pan frying them like others suggested.

Simple Time Pork Chops

This was mediocre at best. It would probably have tasted better if the seasonings were on the meat instead of the mayo. I don't think I'll try it again to find out though.

Battered Balsamic Fish

This is nothing more than fried fish with onions and balasamic vinigar sprinkled on top. Nothing too fancy, but this was surprisingly good! I seasoned the breading, but that's the only change I made. My four year old daughter gobbled it up!

Honey Mustard Grilled Chicken

Rosemary Baked Potato Wedges

I scaled this recipe WAY back, but I only added the listed ingredients basically in the recommended proportions. We all liked it, but it could have used more flavor, via extra seasoning. I'll make this again, next time adding more salt, onion powder, and garlic powder.

Broccoli with Lemon Butter Sauce

My family loves broccoli. I thought this dressed up version would be a nice change, but it was mediocre at best. My kids, who normally gobble their broccoli, barely touched it. This probably would have been better without the water. Cooking the broccoli with the lemon juice turns it brown. It'd probably be better to make the sauce separately and pour it on top of the cooked broccoli, although I probably won't bother making this again.

Honey Walnut Shrimp

I'd never eaten anything like this before, but I was about to make a Million Dollar Pie (from this site) using sweetened condensed milk, and I had some shrimp in the freezer, so I decided to give this a try. This requires a lot of different steps, so I found it a little labor-intensive. (Especially when I had to start over again with new oil after my son thought it would be cute to dribble some water into it.) I mixed flour, cornstarch, and breadcrums for the shrimp breading, which worked well. I served this over white rice mixed with green onions - the mix of the sweet and savory was delicious. My four and five -year old kids liked it as well.

Scalloped Cabbage

The first time I made this, I followed the recipe exactly. It was good but a little bland. The next time I made it, I changed things up a little. Instead of crackers, I used Italian seasoned bread crumbs mixed with shredded 6-cheese (Italian blend) and garlic powder. YUM! What a difference. This is the perfect thing to take to a potluck - it's different without being bizarre. Very, very good.

Skillet Pork Chops with Potatoes and Onion

I cooked this for an hour, but the potatoes were still on the firm side. I would have let it cook longer, but my kids were about to go nuts from starvation. I'm not a huge fan of parmesean cheese, so I thought this was a big, smelly mess. The pork chops were tender though, and my husband and kids seemed to like everything.

Wonderful! The perfect blend of savory and sweet. Seasoning the flour w/ salt, pepper, garlic powder, onion powder, and parsley prior to browning was the only change I made. Simple and delicious meal.

South-of-the-Border Stuffed Peppers

This was an interesting twist on stuffed peppers. I cheaped out and bought green peppers instead of red, which would probably have tasted better. I also couldn't find asadero cheese, so I used 4-cheese fiesta blend shreds sprinkled on top. I added the tomato sauce mixed with some of the enchilada sauce (as per suggested in the "cook's tips") to the top as well. I also kicked up the spices quite a bit. Good basis, but I think it could be better with a little more tweaking, like adding more sauce and cheese to the meat mixture. I will definitely make it again.

Chicken Breasts with Lime Sauce

Instead of pounding the chicken breasts out and frying them, I breaded and baked them, using seasoned bread crumbs. I melted the butter, added lime juice, dill, and chives and poured over the top of the chicken after it came out of the oven. Delicious!

Lemon Pepper Zucchini

When I made this, I used spray butter, lemon pepper, and parm cheese. My husband really liked them, but I think I'd prefer them with just salt & pepper and Italian 6-cheese blend sprinkled on top. A word of advice - make sure you slice the zucchini THICK, otherwise they'll get over-done and be a little on the crusty side.

Chicken with Lemon-Caper Sauce

I substituted chicken broth for the wine. I don't know how much difference that made, but the dish turned out wonderfully. DELICIOUS! The capers add great flavor that blends beautifully with the lemon sauce. Yummy, yummy, yummy!

Quick Cheeseburger Pie

This was good but not great. I made it as listed except I added mushrooms and didn't put cheese on top. I looove cheese, but one cup of swiss mixed into the meat and then another on top seemed like an artery clogger. I also drizzled mustard and ketchup on top like someone suggested. I served it with roasted potatoes, which made the meal seem like a upscale version of a burger and fries. I'll make this again at some point.

Inside-Out Manicotti

I love, love, love this recipe. I've made it several times, and my husband, who thinks that all meals should include meat, raves about it. Even my finicky mother-in-law, who likes to believe she's the only one in the family who can cook, couldn't say anything bad about it.

Baked Scallops

I used this topping with 1# of tilapia the other night. Yummy! I made everything per the recipe and baked it for 15 minutes. The fish was moist, tender, and flaky. The topping was almost excellent: I thought it needed salt and pepper mixed into it.

Apple Pie II

This pie was delicious. I added 1 tsp. vanilla, 1/2 tsp. cinnamon, and 2 dashes of nutmeg, like another reviewer suggested. I also replaced apple juice with OJ, since that's what I had on hand. I didn't care for the orangey tang that it added, so next time I'll use apple juice.
