French Onion Soup III

This was good. Easy too. Turned out great! I added some minced garlic, seasoning salt and Worchestshire sauce to the onions while cooking. I am really impressed with how good this really was...considering that there is not much to it.

Slammin' Salmon

We liked this alot, and it only marinated like 1 1/2 hours! I can only imagine how good it will be when I try it next time after marinating it all day! I added a bit less ginger, but other then that didnt change a thing! Yummy! A keeper, as we say! Oh, yeah..I just used canola oil because I did nto have peanut oil.

Marinated Flank Steak

Cottage Cheese Chicken Enchiladas

This was awesome. My husband and I thought they were really good! At first I thought the cottage cheese sounded sort of weird, but it turned out to be a great addition to enchiladas! Yummy! It made a lot too. It made enough to fill both a 9x13 and 8x8 pan. I froze the 8x8 pan. I also used 2 10oz cans of enchilada sauce and poured some sauce in the bottom of the pan before laying the enchiladas in the pan.

Mom's Zucchini Bread

Good! I did the 1/2 white and brown sugar and 1/2 oil and applesauce. Was yummy. I did also pecans and choc chips. Will not do choc chips next time because the batter was thin and all the choc chips were on the bottom of the pan and I dont think it went well with the cinnamon flavor.

Quick and Easy Alfredo Sauce

I don't really like Alfredo Sauce, but I thought I would surprise my husband because he loves it. Well, we both really liked this. I made it with low fat creamcheese and skim milk and it turned out great. I even served the leftovers the next night over steamed brocolli. Yum!

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

Frozen S'mores

This was my first ever attempt at an ice cream dessert (they always intimidated me and seemed too much of a hassle!) It turned out great, was eay and delicious! After I made it I thought it was boring sounding, but boy was I wrong! Yummy! Looked nice too with the lines of chocolate and vanilla and chocolate ice cream! I didnt do any thing with the marshmellows...left those out completely! A keeper!

World's Best Lasagna

This was great! The best I have ever made. A little more involved then I usually do (I have never made a lasagna where I had to cook the noodles...but it worked just fine!) Didn't use fennel. Not sure I would like the flavor. Next time will try making it in 2 8X8 and freezing one. Also, I made it one nite and cooked it the next day for dinner. It was awesome! Great leftover too! I thought it made a ton of sauce(which was really good) so I froze the extra sauce and plan on using it for spaghetti some nite I need an easy meal. Now I just make the sauce and freeze it in meal portions. I usually add a little red pepper to add a little heat.

Chicken and Corn Chili

Very Good and Very Easy! I only used 3 ckn breasts and thought that was plenty. Also used plain corn and added a can of diced green chili peppers. I ended up adding some diced tomatoes and cheese. Served it with crushed up tortilla chips and sourcream. A keeper!

Tzatziki Sauce (Yogurt and Cucumber Dip)

First time I ever tried something like this. I used 2 coffee filters instead of cheesecloth. I also used only 2 6oz containers of plain yogurt. I served it over the Souvlaki(from this site). It was all very good!

Yummy! Reminded me of Gyros. Marinated meat had a really good flavor. I used pork tenderloin and it was perfect. I prepped everything the nite before and marinated everything after I got home from work the next day. I didnt cook them on skewers, but instead, a grill basket I have. That was so much easier and not messy either! I served it on pitas and topped it with Tzatziki Sauce(yogurt and cucumber dip from this site) and tomatoes. We both really enjoyed this recipe! Thanks for sharing!
