Tzatziki Sauce (Yogurt and Cucumber Dip)

First time I ever tried something like this. I used 2 coffee filters instead of cheesecloth. I also used only 2 6oz containers of plain yogurt. I served it over the Souvlaki(from this site). It was all very good!

Buttermilk Wheat Bread

I don't usually have buttermilk in the house, so a lady I work with told me to buy the powdered buttermilk. I used(with the correct amount of water that the buttermilk powder called for) it and it seemed to work fine. Overall,I wasnt really impressed with this recipe, considering that it got 4 stars. Maybe I should have used real buttermilk. I also am never really happy with anything I make with my breadmaker. So who knows!

Chocolate Eclair Torte

I love this recipe. Have been making and eating it for years! Always requested. Doesnt look easy, but it is. My Mom will make 2 and make 1 with banana pudding. I prefer the french vanilla. I also usually make individual tortes. That always goes over well.

Baked Polenta with Fresh Tomatoes and Parmesan

I could not fine quick cooking polenta anywhere..so I used quick cooking grits instead. I thought it was good. But I like polenta (memories of my grandma). I served it with hot italian sausage and homemade pasta sauce.(from the lasgna recipe reviewed on this site)

World's Best Lasagna

This was great! The best I have ever made. A little more involved then I usually do (I have never made a lasagna where I had to cook the noodles...but it worked just fine!) Didn't use fennel. Not sure I would like the flavor. Next time will try making it in 2 8X8 and freezing one. Also, I made it one nite and cooked it the next day for dinner. It was awesome! Great leftover too! I thought it made a ton of sauce(which was really good) so I froze the extra sauce and plan on using it for spaghetti some nite I need an easy meal. Now I just make the sauce and freeze it in meal portions. I usually add a little red pepper to add a little heat.

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

I do equal amounts of each of the 3 and pour it over bacon wrapped waterchestnuts in a slow cooker...SOOOO Good!!!

Sean's Falafel and Cucumber Sauce

This was very good! I have never had falafel before and my husband was a bit concerned when I said I was going to make it! He was wondering where the meat was! But WOW! We both liked this alot! I served them in pitas with the sauce(which was yummy!) and tomatoes! I made 12 total falafel. Because I dont like to fry things, I greased a pan with EVOO and baked at 450 for 20 min total(flipping after 10min)! They were perfect! As my husband said...this recipe is a keeper!

Frozen S'mores

This was my first ever attempt at an ice cream dessert (they always intimidated me and seemed too much of a hassle!) It turned out great, was eay and delicious! After I made it I thought it was boring sounding, but boy was I wrong! Yummy! Looked nice too with the lines of chocolate and vanilla and chocolate ice cream! I didnt do any thing with the marshmellows...left those out completely! A keeper!

Slow-Cooker Pepper Steak

Both my husband and I thought it was very salty. Otherwise it was easy and pretty good. I also did not brown the meat ahead of time like it said. I have no time for that when I am putting dinner together before I go to work(very early morning),and never have had a problem with not browing the meat when a recipe calls for it.

Cottage Cheese Chicken Enchiladas

This was awesome. My husband and I thought they were really good! At first I thought the cottage cheese sounded sort of weird, but it turned out to be a great addition to enchiladas! Yummy! It made a lot too. It made enough to fill both a 9x13 and 8x8 pan. I froze the 8x8 pan. I also used 2 10oz cans of enchilada sauce and poured some sauce in the bottom of the pan before laying the enchiladas in the pan.

Baked Pesto Chicken

This was good. Tomatoes are not in season now so I really dont like buying them if I dont have to. I used a can of diced tomatoes;drained, instead. It worked fine.

Ham and Green Bean Casserole

We did not really like this recipe. My husband who will usually eat anything toook 2 bites and got the leftovers out of the fridge to eat instead. I didnt think it was that bad, but definately nothing special(which I didnt expect it to be I just was looking for a recipe to use up the little ham I had leftover from a party we had a few days prior.)

Cream Cheese Coffee Cake II

I thought this was just ok. Nothing real special. It appealed to me at first, but when I ate it I am not sure I like the cream cheese layer. I did add some cinnamon and nutmeg to the batter.

Six Week Bran Muffins

Pretty good. I made a few changes though. I used Raisin Bran for the cereal. I used regular skim milk, cinnamon, extra raisins and applesauce instead of the oil. They are very moist. I scaled the recipe down too. One thing the recipe doesnt mention is whether you are to grease the muffins pan or use liners. If you dont use liners, make sure to grease the pan. They do stick!

Chicken Marsala

This was good. Easy too. I didnt use the oregano and should have used more mushrooms(and I dont like mushrooms!!!) The mushrooms took on the marsala flavor excellently! Served over egg noodles. Very tender chicken. Maybe next time some onion and garlic added with the mushrooms. Might try thickening the sauce too. A keeper.

Awesome Carrot Cake with Cream Cheese Frosting

This was very good. Moist. I did the 1 cup applesauce and 1/2 c oil and it was great! Made the cream cheese frosting to taste(not as much sugar). A keeper!
