Amaretto Roasted Chicken

Loved this Chicken! I used way too much amaretto and basted throughout the baking process. It was a little too sweet and candied at first but then I remmebered the little lemon in his butt and squeezed that on the meat and the tartness really set off the sweet flavor. I would recommend roasting a whole lemon. I also rubbed the skin with garlic and salt.

Sesame Udon Noodles

Loved it. Made it with quick stir fried onion and peppers and snow peas. My boyfriend went back for a fourth helping. I will have to make a double batch next time!

Lentils and Rice with Fried Onions (Mujadarrah)

Yum. I love this stuff. I make it with plain Greek yoghurt. I'd add more onions, but i'm an onion freak so that's a personal preference thing.

I used chicken breast and it was way too dry. I also put in peas instead of egg plant but that i think added to the sweetness which i thought was a little too much.

Baked Omelet Squares

Made with mozz cheese and a little bit of mexican velveeta. Also can of tomato, onion and turkey lunchmeat. Added salt, a bit too much. Pepper ok.

No eggplant - 1/2 bag peas instead. Needs more kick, cayanne? Try turmeric. Made with chicken breast - too dry. 9.5 hrs on low.
