Eggnog I

I always hated eggnog - before I made this! Probably because I'd always had the in the carton. Never again! I made this for Christmas and everyone drank it up - and asked for more! Once I saw how fast it was going, I decided to try it and now I'm hooked! Thank you so much for this recipe - I wouldn't change a thing. My hubby already made me promise to make more for New Year's Eve.

Pecan Pie

Excellent! Excellent! Excellent! This pie flew off the Christmas dinner table! This was actually my first time making and tasting pecan pie and it was delicious warm with vanilla ice cream on top. Yum! Will definitely make this again.

Michelle's Famous Washed Cranberry Sauce

Not a cranberry sauce fan before this. Always had the canned stuff. Never again. I substituted orange juice for half of the water. It came out less firm than I would've liked so next time I'll use less liquid. But, there will definitely be a next time. Everyone had to eat it out of a bowl, but they loved it!

Chewy Chocolate Cookies III

My hubby and kids absolutely love these, but I didn't think they were chocolatey enough. It took almost twice the time for them to cook. Maybe it's my oven. They also didn't spread like most cookies do when they bake and came out very dense. Maybe I did something wrong. Will try again, but next time will melt some chips and add it to the mix. May also substitute butter for 1/2 of the shortening next time. Hubby and kids thank you, Rosina.

Grandma's Lemon Meringue Pie

I'm not a fan of lemon meringue pie, but hubby loves it, so I made it for him. His only complaint was that, the meringue slid right off the filling part and it was weepy. He also didn't like the bits of zest in the filling. I think I'll take another reviewer's advice and strain the filling next time. Other than that, the filling tasted really good. I increased the sugar by about 1/4 c. (he likes it really sweet.)

Cha Cha's White Chicken Chili

Absolutely delicious! I had white chili once, years ago and have been looking for a recipe ever since. I took the advice of a few other reviewers and pureed one can of beans and added cornstarch to thicken it up a bit. I left out the jalepenos (I like spice, but not too much!) I also added a little salt and used a bag of "mexican" cheese mixture (cheddar, aseago, monterey). Even my VERY picky 13-year-old daughter loves it! I made cornbread to go with it for dinner. Broiled Tilapia Parmesan

A nice change from the usual way I cook it (baked, with not a lot of flavor). Even my hubby, who's not a big fish fan liked it so much he had seconds! I accidentally used 1/2 c. butter so I had to double the recipe. (Had a LOT left over). Probably just as good on chicken breasts.

Crab Quiche

I made this for dinner tonight and it was delicious! My mom has been the "quiche queen" in the family - until now! I may be able to give her a run for her money with this one! I made a few adjustments...We hate imitation crab, so I used canned. I only had half-n-half so I used that with 1 t. cornstarch added to it in place of the heavy cream. I also added garlic powder, a little Old Bay, and touch more hot sauce. Hubby had thirds and even picky 13-yr. old daughter left none on the plate. Served with a big salad. I will certainly make this again soon.

Awesome Slow Cooker Pot Roast

Excellent! Not big on mushrooms, but went ahead and used the soup anyway. It added a great flavor and the pieces were so small it didn't bother me. Threw in some potatoes, onions, and carrots. Meat was very tender. This one's a keeper.

Tangy Honey Glazed Ham

OMG! I made this yesterday for Easter dinner, along with the pineapple stuffing recipe from this site, and it was delicious! The one other time I made a ham, it turned out bland-tasting. This one had a beautiful crust on it and smelled so good cooking. I was worried that the flavors wouldn't penetrate the meat because they're only added in the last hour, but it was juicy and wonderful all the way through! I didn't have an orange so I left out the zest and used 1/3c. of orange juice. I think I'll tell Mom to let me make the ham from now on!

Pineapple Stuffing

Family loved this. I made this with the tangy honey glazed ham for Easter dinner and my family ate it up. I'm not a big stuffing fan (don't like moist bread) but the hubby and kids do. I took the advice of others and cut back the sugar to 2/3c. and hubby said it was just right - just sweet enough.

Chicken and Dumplings III

My 13 yr. old LOVES chicken and dumplings. It's all she orders when we go to Cracker Barrel. I decided to make this dish for her. She loved it and so did I. I added carrots to mine and used less celery than the recipe called for. I sauteed the veggies and then seared the chicken before I cooked it through. Next time I will use more chicken broth and soup. (I like mine a little soupier.) And I think I will use Bisquick next time. Believe it or not, I like my dumplings the way my mom used to make 'em - doughy!

Grandma's Chicken Noodle Soup

My under-the-weather daughter loved this for dinner tonight. I scaled the recipe down to 6. Just the right amount of salt. I added some carrots and sauteed the veggies and the ckicken. Very good. Much better than the canned stuff where you can hardly find any chicken!

Fresh Strawberry Pie I

I had a few problems with this pie. It was way too sweet and didn't set up right. Maybe I did something wrong, but I wasn't sure how "thick" it shoud be before taking it off the heat. I cooked it until it for at least 15 minutes and it didn't seem to be getting any thicker. Seemed thick enough when I put the pies in the fridge, but this morning it's running all over the place! Also, I cut down on the sugar and it was still way too sweet! Sorry.

Belle and Chron's Spinach and Mushroom Quiche

I should have read more reviews before I made this - it oozed all over the place. (Good thing I had a cookie sheet underneath!) I'm not a fan of mushrooms, but chopped up and combined w/other ingredients, they didn't bother me. I sauteed the veggies first in a little of the bacon grease. I needed to put it back in the oven - on 200 degrees for about 1/2 hour more because it was still watery after it cooled. The flavor was pretty good, though. I made two - one for Teacher Appreciation day at my kids' school and one for home and there was none left at school. I would cut back on the ingredients - especially the spinach - it was a little overwhelming. Hubby loved it. Great quiche idea, but will probably try another recipe next time.

Sensational Sirloin Kabobs

I made these for our anniversary party and still had a bunch left over. The taste was bland, even though I marinated them overnight, along with the mushrooms. The meat was very tough -may be because I bought meat already cubed (from the market). We used cherry tomatoes, pineapple, green peppers, and mushrooms. Don't think I'll make these again, but if I did I'd use the sirloin and cut it up myself.

Chocolate Pecan Delite

I made this for our anniversary party and it was literally gone in minutes! I was afraid it might taste boring - like merely pudding on top of a crust, but it was delicious! (I had to put some aside so hubby and I could have some!) Everyone loved it and I had to give the recipe to at least 3 people. I told hubby I might try it again with a graham cracker crust, but he told me not to change a thing. The only slight problem I had was I think I should've creamed the cream cheese mixture with a mixer before adding it to the pudding mixture. I simply mixed it with a spoon. It made it a little lumpy, so I had to put it through a sieve to get the little lumps out. Otherwise, perfect!

Dry Rub for Ribs

Very good. I added onion powder and left the rub on the baby backs overnight and then used the sauce from Barbecue Ribs by Kristy on this site. Excellent!
