Very Chocolate Ice Cream

This was the PERFECT chocolate ice cream recipe!! Taste and texture were spot on... I felt like I was putting frozen ganache in my mouth... I did double the amount of semisweet chocolate (I used Ghirardelli chips), but I don't know that it was necessary. As another reviewer mentioned: DO NOT BOIL, make sure your chocolate is in small pieces (GRATE if possible), and use the best chocolate that fits your budget. You'll LOVE the results. O, and if you can find it... use MEXICAN Vanilla!!

Winter Vegetable Hash

I was looking for a recipe to use kale... EVERYONE in my family liked this, even the 4, 5 and 9 year olds!! I did a few things differently based on what I had (no bell pepper, onion instead of shallot). SOOO GOOD!!

Bread Machine Focaccia

This was wonderful!! I divvied up the dough into 8 mini loaf pans, allowed to rise a second time, and baked about 18 minutes. Perfect size for sandwiches, with a nice crust all around. Definitely sprinkle the top with kosher salt.

Ratatouille

This was really good!!! Often the acidity of tomatoes will keep onions from cooking, so, as suggested by another another reviewer, I also sauteed the onions with the garlic and the eggplant. Otherwise, I followed the recipe exactly. My husband and I loved this! Definitely will make this again!

Best Ever Jalapeno Poppers

This is a good recipe with room to play! I leave out the bacon (not the flavor I wanted), add a couple cloves of garlic, 1 tsp onion powder and maybe 1/2 tsp salt to cream cheese mix. I pipe the filling using a zip lock bag, less mess! I use panko bread crumbs for the second dip, and fine bread crumbs for the third dip, and sprinkle the poppers with salt before the third drying... very crunchy, very good! My husband is an absolute FIEND for these, and after trying several recipes, this is the one we've settled on as our favorite. Thanks for such a good post!

The Best Rolled Sugar Cookies

I wanted a sugar cookie recipe that could be used for both roll and drop cookies, and this is it. I actually mixed up about 1/4 of the recipe, scooped and baked for about 10 minutes with out chilling. They have a great flavor!! Make sure you DO NOT USE a non-stick pan, you want the flavor from the golden browned bottoms of the cookie!!

Chicken Soup

I needed a recipe that didn't call for celery, which I'm out of. I already had thighs and legs cooking when I went looking for this recipe, so I used those, and the chicken broth (rather than the water and chicken base). My frozen zucchini was shredded, so I used that (easier to sneak in), and since my son's tummy was upset, I left out the garlic and added seasoned salt. My other son LOVED this as much as I did, and he ate 3 bowls of the stuff!! Thanks for a keeper recipe, this was great!!

Lentil Rice and Veggie Bake

Similar to another reviewer, I'm lazy. I sauted the veggies, mixed them with uncooked rice and lentils, etc... baked in the oven at 350, for about 45 minutes... It didn't really need to cook much longer, in my opinion. Good post, thanks!

Winter Energy Cookies

These are also really good as mini muffins... perfect for what I was looking for... a healthier snack for my kids than a handful of cereal or crackers. They're 2, 3 and 7, and they love these! I also really like the texture. Also, these seem to taste better "the next day" than fresh made... When they first come out, they seem to have a "healthy" taste to them... I used almonds and cranberries for the walnuts and raisins.

This was good. I did add a teaspoon of sugar, about 1 tsp of salt, and maybe 1/2 tsp cayenne pepper. I would like it a bit thicker, might add dry pectin next time. Thanks for a great post!

Taco Seasoning I

I love this stuff... I multiply the recipe by about 10 to have bulk supply on hand. Though I am not exact in measuring, the only change I deliberately make is to omit the salt, as I simply prefer to add salt myself. But if I was making this just for a single recipe, the amount of salt listed is just fine.

Greek Chicken Pasta

I liked this a lot, so did my husband. I used some leftover turkey that I wanted to get rid of, and I added a TBSP of balsamic vinegar with the lemon juice. I made a few other changes based on what I had available, but this was good, thank you.
