Sloppy Joe Sandwiches

Super easy and delicious - these words seldom go together! I procrastinated going to the grocery store and wanted to whip something up from my somewhat bare cupboards - I was out of Worchester sauce - very concerning, so I substituted 4-5 dashes Frank’s hot sauce and 4-5 dashes liquid smoke to a doubled recipe (be careful with liquid smoke – a dab will do ya). I added two minced garlic cloves and ¼c dry onions (let them soak in water to reabsorb moisture for 3-4 minutes prior to adding) to the ground beef while browning. I used all the other seasonings including the garlic and onion. This was so tasty my husband ate what was left on my plate! What a find; I know this recipe will be a staple in my house. Thanks for sharing!!!

Blueberry Cream Muffins

I followed some healthier tips by replacing half the flour with whole wheat flour and the oil with applesauce. I've seen these suggestions many times and thought I'd give it a try. I also used half brown sugar and half white sugar and I increased the blueberries to three cups. I had to increase the bake time to 24 minutes as well. The muffins turned out great and did not taste healthy at all! The muffins have a perfect balance of sweetness to the slight tartness of the blueberries. I think the sour cream was the secrete to a deliciously moist muffin. This is the perfect muffin - I will make over and over again!

Black-Eyed Pea Gumbo

Following reviews, I made just a few changes. I added 3 Hillshire Farm Hot Links diced and only used 3 cans of peas. The hot links add enough heat to eliminate the need for red pepper or hot sauce. This is a very different recipe for me - somewhere between chili and gumbo. Served to family and surprise guests - ugh! Everyone really liked it. Thanks for the recipe - it's a keeper!

Seared Sea Scallops

followed advise to toss ingrediants in bag including parmesan cheese and added about 1/4 cup of white wine to the pan. cooked quickly to sear and give the carmelized color, but not overdone to avoid rubbery scallops. Beautiful and tasted great!

Halibut Supreme

I wanted to make something special for New Years. I made this - followed a review to replace 1/2 the cheddar with parmesan cheese, otherwise followed the recipe. The fish was very moist and flavorful and would be a good dish on it’s own. However, with Halibut being so expensive - I gave attention to sides and presentation. I topped the fish on ultra creamy mash potatoes, sided with seared scallops and parmesan asparagus - all great recipes found at allrecipes. I'm a decent cook and will say this was one of the best dishes I've ever made. The presentation was good and the taste was phenomenal! We will be raving about this meal throughout the New Year. Happy New Year and thanks for a great recipe!

Ultra Creamy Mashed Potatoes

I've made these potatoes twice now. The first time I was low on broth and did not boil the potatoes in broth, but just added when mashing. They were good and a do again. The second time I boiled as directed in the broth and could not believe the difference it made. The broth enhances the flavor emensely. They were fabulous and I am doubtful I will ever make them anyother way. I am making them again today for my New Years dinner :-)

Cod with Italian Crumb Topping

I make fish fairly often and look for variations. Read a few reviews for this recipe and eliminated the egg, mixed 2T light mayo with about 1t fresh lemon juice and brushed fish with this mixture. I lightly sauted two green onions and two minced garlic cloves in about 2T olive oil. I used this to grease my pan and placed the fish on top - yum! I did not use garlic powder, salt, or italian seasoning, but used italian panko crumbs. Everything else the same. I made creamy mashed potaoes and topped the potatoes with the fish. Nice presentation and everyone raved over how good it was.

Soft Chocolate Chip Cookies II

Made exactly as directed - I did use butter flavored shortening. I measured out by tablespoonfuls and baked 8 minutes at 350. All who tried the cookies wanted more and they looked so perfect many thought they came from the bakery! Very, very tasty and not overly sweet. I will make this recipe regularly.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

made as directed several times now. It is a lot of work but absolutely worth it. these tacos are spicy hot (be careful with the adobo sauce!), crunchy, and toped with a hint of sweet sauce. each time i plan to try with corn tortillas, but the recipes is sooo good there is no point in messing with perfection!

Peanut Butter Oatmeal Cookies

I've made these twice according to the recipe with the same batch (I froze half the dough). The first time they turned out OK, but they were a bit dry and crumbly without much peanut batter. I baked them for the recommended 12 minutes and although they did not look overdone, they were. I made the other half last night, but added a half cup of raisens (1 cup for recipe) and baked for 9 minutes - they turned out great and it was amazing the difference in peanut butter flavor. Great Recipe - be careful not to over bake!

Easy Taco Casserole

I followed the recommendations to use taco seasoning and sour cream instead of mayo. I did not add water either. I put the top layer of chips and cheese on the last 6 or 7 minutes as was recommended. I wish I'd stayed with fresh tomatoes, even so it was a great dish and easy to make. My husband was insistant that this was a do again. This recipe will be a regular in our house!
