Slow Cooker Ham and Bean Soup

Reviewed: Jan. 1, 2014
Excellent recipe! minor changes - added a can of diced tomatoes and several dashes of Franks hot sauce - just added some flavor, not hot. I used 4 cups broth, 2 cups water. The store was out of 15 bean soup mix so I used the dried great northern white beans (16 oz bag) in place of it and omitted the can of northern white beans, of course. Otherwise I followed the recipe and will use again whenever I have a ham bone. Blending two cups of soup and adding back in one hour prior to serving helped to slightly thicken up and enhanced flavor. thanks for the recipe!

Southern Candied Sweet Potatoes

Reviewed: Dec. 29, 2013
I did back off on the sugar and nutmeg by about half. The dish turned out with a nice amount of sweetness and was rated as fantastic by Christmas dinner quests. Will do this recipe again!

Yellow Squash

Reviewed: Jul. 30, 2013
omitted the pepper and soy. Pretty much used this recipe to build on. cooked 4 strips of bacon not too crisp, removed excess bacon grease, cooked 1/2 red onion diced, six sweet peppers, 1/2 bag of mixed squash trimmed until soft but still firm, then cut up the bacon and cooked another minute to mix flavors and rewarm the bacon. Did not add soy, salt or pepper. The serving bowl was scrapped clean, says it all.

Win's Shrimp and Spaghetti

Reviewed: Feb. 17, 2013
I was concerned about the teriyaki overpowering put decided to go for it. I made as directed but did reduce butter by 3T and did not miss it a bit. The butter sauce has a very slight bite to it from the seasonings hardly even resembling teriyaki. Very good dish! served with broccoli and garlic bread. yum!

Broccoli Cheese Soup

Reviewed: Nov. 25, 2012
This is an incredible recipe that I have made a few time now. Today's version I followed a suggestion to use cheddar cheese in place of the Velveeta. I love cheddar, so I went for it. Should you be inclined, only use the cheddar as garnish. Using the cheddar in the recipe does not dissolve and the more you heat the more it clumps! The original recipe is awesome and I will stick with it from now on. Thanks for a great recipe.

Butternut Squash Cakes

Reviewed: Nov. 6, 2012
This was a great addition replacing the starch from our plate. I did substitute some ingredients, Chili powder (1 TBSP)for the curry, Coconut flour for the corn, and I needed two eggs for the batter to stick. Very tasty, everyone at the table liked it and requests it again. Will be great for breakfast too! My son said it was like hash-browns. Thanks - would never have thought to do this with squash.

Cream Cheese Frosting II

Reviewed: Nov. 18, 2011
Sooo Yummy! I love cream cheese frosting. I did increase the sugar a bit to tone down the tang of the cheese for my pumpkin ginger bread, and would recommend you add sugar to your preference starting with recipe amount for base.

Whole Grain Breakfast Cookies

Reviewed: Nov. 6, 2011
This is a wonderful cookie. Healthy but doesn't taste like it. Hey, what they don't know won't hurt um. I did substituted the walnuts with almond flour and reduced the cinnamon by nearly half - that is what I had on hand. I used dark chocolate chips - yum. I followed the advise to slightly smash when taking out of the oven to cool to prevent crumbling with success. We really enjoyed these cookies and I will make them regularly. The only change I will make next time is using equal amounts of cherries and dark chocolate chips (3/4 cups each). They were chocolaty with a hint of tart cherry. I'd like to equal that out a bit since I like the tart as much as I like chocolate! Thanks for a fantastic recipe!

Grandmother's Buttermilk Cornbread

Super easy to put together! I substituted whole wheat pastry flour and used 1/3 cup agave syrup in place of the sugar (low glycemic index). I used pampered chef muffin pan making 12 biscuits and baking 20 minutes.... They turned out great.

Thai Shrimp and Cabbage

Reviewed: Oct. 26, 2011
This is a super tasty and easy dish to put together quickly (does it get any better than that)! I had red cabbage on hand and it worked out fine. Otherwise the only significant change I made was replacing the soy sauce with Bragg's Liquid Aminos (healthy substitute) and eliminated the cilantro. I really liked having a vegetable (cabbage) in place of a starch (rice).

Spinach and Strawberry Salad

Very easy and absolutely Delicious! I used 1/4 agave syrup (low glycemic index) in place of the sugar, added almond slices, and garnished with blue cheese. I also followed another review and used raspberry balsamic vinegar in place of the white wine vinegar. It turned out very sweet and tangy. Thank you for a wonderful recipe!

Magnificent Cheesy Brown Rice

Reviewed: Jul. 5, 2011
made as directed adding cooked chicken. Extremely tasty with the cheese. I will be adding cheese on a regular basis to my brown rice. Amazing how good it tastes bringing boring brown rice to popping yum-yum. The onions and peppers gave a sweet balance. This is a super easy recipe that you will make over and over again.

Basil Chicken over Angel Hair

Reviewed: Jul. 3, 2011
what a nice alternative to spaghetti! Not complicated and easy to make. I marinated my chicken with a small lemon for several hours (tenderizes beautifully) then cooked it with 1 garlic clove minced and about 1/4c diced onion. I then prepared as directed adding 1/2 cup mushrooms (didn't need it). Turned out great!

Wonderful Waffles

Reviewed: Jun. 19, 2011
The difference between waffles and pancakes is the testure. These waffles turn out crunchy on the outside with a soft middle - so good. I followed the recipe exactly as written but add bacon. I cut bacon into pieces and cook 2/3 in the griddle then add the batter - about 1/2 slice per two waffle griddle. These were the best waffles i've ever made. I may add vanilla next time like some of the reviews suggest, but should I forget - won't miss it. These are fantastic; follow the recipe directions. The result is worth the fuss.

Braised Balsamic Chicken

Reviewed: Apr. 11, 2011
I have made this dish probably a dozen times and just realized I never rated it. This dish ALWAYS turns out great and is requested often! The recipe is very forgiving on ingrediants too. Tonight I used dried onions instead of fresh and added mushrooms - and served over wheat pasta. Yum! I frequently add chopped garlic too. This dish is excellent over brown rice - adds so much flavor. If you like basalmic vingegar even a little bit, you will love this recipe. Make sure you brown your chicken first to make sure it stays moist after simmering.

Cowboy Oatmeal Cookies

Reviewed: Mar. 1, 2011
After reading several reviews, I added 1/2 teaspoon of vanilla and increased the oats by 1/2 cup because my batter was a bit moist. I did not have the butterscotch chips, so I tried Herseys Cinnamon chips instead - OMG. This is the best cooking I have ever made!!! Rave reviews and recipe requests from those who have had the pleasure of satisfying their sweet tooth with this wonderful, wonderful cookie. Thank You. If you took all the 5 star cookie recipes, this would certainly be one of the top prices! Thanks for sharing!
