Cajun Chicken Pasta

Very tasty!!! However, I really had to jack up the cajun seasoning, but I have a feeling Canadian Cajun has a LOT less kick (wusses....lol) I'll pick up some real cajun next time I'm in Florida. Boy-type people in the house really liked it, so it's going into the regular rotation!

Apple Pie by Grandma Ople

My husband and sons all said better than store bought! Definately will be my go to from now on. I put the apples into the mixture (I also added 1 tsp. cinnamon, 1/2 tsp. nutmeg and 1 tsp. vanilla) to coat them and then poured most of the rest over the apples after I put them into the crust, but kept back a bit of the mixture to paint the top crust with. I made a full top and cut a design into it, rather than lattice.... I've never been fond of the latice look

Lemon Poppy Seed Loaf

Gone in 20 minutes! Absolutely delicious! I made no changes to the recipe at all, but baked it as a bundt for an hour and glazed with the following: Ingredients 1/4 cup lemon juice 1/2 cup water 1/2 cup sugar 1/4 cup water 2 tablespoons corn starch Heat lemon juice and 1/2 cup of water until simmering Slowly add sugar, stirring until it dissolves Separately, mix cornstarch and 1/4 cup of water until smooth Slowly add flour/water mix to lemon juice, stirring Cook for about 4 minutes to let glaze thicken, stirring occasionally Let cool and pour over cake

Four Egg Yellow Cake

I made this cake, following the directions exactly, four days ago. Usually things I bake have, at most, a two hour survival rate (and that's only if the two teenaged boys aren't home). There's still almost 1/2 left of the cake. Definately won't be making this again...... extremely disappointing!

Teena's Spicy Pesto Chicken and Pasta

Ok, made this recipe again, with the following mods: sauted chicken in garlic and white wine along with three tbs chili paste (we like it hot); added green and red peppers and zuccini. I thought I was cooking for three, SEVEN ended up showing up so upped the chicken and pasta content(me, hubby and five picky teens) Sigh...... no leftovers for tomorrow -- seems it was a resounding success! :( === Wonderful Taste! However, the cilantro wasn't a hit.... was one too many flavours

Overnight Coffee Cake

Simply amazing. We love cinnamon, so I jacked that up for the topping. I don't think I'm going to get a chance to taste it cold, as 20 minutes out of the oven, it's already 1/2 gone!

Rave reviews from everybody! I would suggest doubling the shrimp though. I also kicked it up a bit with cayenne pepper just to make it a wee bit more interesting

Cajun Seafood Pasta

Definately going to making this one again! I followed the recipe for six serving, there were four for dinner, and absolutely NO leftovers! Like others, I saute'ed the shrimp & scallops in garlic and wine, but also held back half of the green stuff until closer to the end of the cooking time to let the fresh flavours of the parsley, green onion and basil "pop"

Roasted Rack of Lamb

Can I give eleventeen stars? My tweaks: I didn't use any salt (easier to add to taste than to take away). I seared the lamb in olive oil and garlic. I ALWAYS have the jarred chopped garlic on hand, so I added garlic to the dijon mustard and then diluted the dijon mustard with some of the juice from the garlic. I mixed the bread crumbs with fresh ground pepper, garlic powder, onion powder and rosemary; In the oven at 350 for 45 minutes, then 400 for 15 minutes, then cut the rack into individual ribs for another 15 minutes. Cooking it slower makes it more tender and juicy. This has gotten the most raves out of anything I've made!

Chicken with Garlic, Basil, and Parsley

This recipe was an instant family hit and is now a favourite. In the last 20 minutes I top it with diced tomatoes, fresh basil and feta cheese. The only other thing I would strongly recomend is to brown the chicken beforehand so that it doesn't look so pale on the plate.
