Raisin Sour Cream Bars

As I am typing this, I just finished eating a bar of my 2nd batch. Yes, 2nd. I made my first batch yesterday and it was marvelous. Today, I made my 2nd batch using all healthy ingredients just to see if there is a difference. I used whole wheat flour, egg substitute, fat-free sour cream, light margerine and Splenda. And guess what?? It is still marvelous. Now I can enjoy these bars without all the guilt! Thanks for the recipe.

Black Beans and Rice

I was looking for the recipe which is similar to my favorite boxed black bean and rice. I guess this is close. I did few changes to suit my taste however. I used 3/4 short grain brown rice with 2 cups vegetable broth and 1 1/2 cup chicken broth. Added 2/3 tsp cayenne pepper, 2/3 tsp chilli powder and about 1 tsp pepper flakes. I know it probably sounds crazy to some people, but I love spicy food. Even with this extra addtion, it is not that spicy for me. I added a couple dashes of italian seasoning to give it more flavor. It turns out great. Thanks for the recipe!

Grandmother's Buttermilk Cornbread

This is a very delicious recipe. I made mine low-fat and healthier by using egg substitute, whole wheat flour, splenda and non-fat plain yoghurt for oil. It turned out amazingly great!

Chocolate Banana Oatmeal Porridge

I love the idea of adding in mashed banana in a porridge. Definitely a different way to serve plain old oatmeal. I love the fact that oatmeal makes a nutritious breakfast and I was looking for a new way to prepare it, rather than eating pre-favored, packaged instant oatmeal which is not that healthy. Finally, I found one. However, I made mine low-fat. I opt out the chocolate chips and used 1 tsp brown sugar for one serving (I scaled down to one serving) only. It is sweet enough for me, as banana has its natural sweetness added to it already. And I used half water, half fat-free milk. It turned out fabulous! All you health conscious people out there, if you want a low-fat, low-cal, delicious oatmeal porridge without compromising the good taste, do it this way!!! I promise you, you won't be disappointed. Thank you so much for the recipe idea.

Chicken Garlic Pizza

Personally, this is the best pizza I ever had. It is very different from the traditional tomato-based, cheese-laden pizza. I made my own whole-wheat pizza crust, and grilled the chicken with cumin, paprika, chilli powder, onion powder and garlic and black pepper salt to give it more flavor. I used more garlic than required (since I love garlic!) and even added garlic powder into the butter (I used light margerine) mixture. It turned out fabulous. I also sprinkled on dried oregano and italian seasoning to give it a more herbie taste. You would like to add fresh sliced white mushrooms too! My husband and I love this pizza and I would definitely keep this recipe as long as I live! Thank you so much for this worthy recipe!!!

Lower Fat Banana Bread I

I have made this bread twice within a week and ate it all by myself! (Cos my husband don't like cooked bananas) Anyway, I used half brown sugar and half splenda. Half whole wheat flour. I added 1 tsp cinnamon, 1/2 tsp nutmeg and 1 tsp vanilla extract. And I used egg substitute in place of real eggs. To top it all off, I added in chunks of sliced bananas into the batter before putting it into the oven! The result..?? Heavenly delicious!! Especially if you're nuts about bananas, like me. I also added raisins both times and next, I am going to try chopped dates.

Alaska Salmon Bake with Pecan Crunch Coating

This is indeed a fabulous recipe. My husband says it tastes like from the kitchen of an upscale restaurant. To avoid the toppings being too dry as what the other reviewers said, I drizzled on the honey mustard sauce on the crumbs before baking them. It turned out amazing! It was crunchy and full of flavor! The only change I made was I used hot mustard instead of dijon (the only one I had in the fridge), light margerine for butter and almonds in place of pecans. Terrific!!!

Simple Whole Wheat Bread

This is indeed the most delicious bread made! I scaled down to 1 loaf and followed all the same ingredients except that I used vegetable oil instead of butter. I used the whole package (0.25 ounce) of yeast too. However, having experience in baking bread often, I mixed the ingredients as how I am used to. I mixed all the dry ingredients together, then the honey, vegetable oil (substitute for butter)and lastly the warm water (bit by bit). I mixed them well, then knead them on a floured space. It worked just as well, with less the hassle, I feel. The bread turned out perfect. The texture was soft and chewy. Now, I regret that I made only one loaf. I will definitely make this again. Marvelous for sandwiches!!
