Pumpkin Cheesecake Bars

Make sure you CHILL them!! I tasted these semi-warm after baking and thought the recipe was a dud. But overnight in the fridge turned them from a D to an A! Very good flavor and texture.

Lemon Rosemary Chex® Mix

This is a good recipe but extremely MILD without much more added. I doubled, even tripled some of the flavors and it still was very bland. If you add a lot more rosemary, garlic, lemon and butter, it has a great flavor. But as is, it tastes like slightly seasoned dry chex.

No Bake Choco-Peanut-Oatmeal Cookies

Amazing!!! Same as the others, I reduced the sugar (didn't really measure- used about 1 1/4 c), increased the PB to 4 tbsp and the vanilla to 2 tsps. I cooked for 5 minutes, stirring and then put the tray in the fridge to set for a few minutes and they were perfect. They set up nicely with no problems. Tastes like cookie batter!! YUM!

Garlic Chicken

I absolutely love this recipe for the ease of preparation to the incredible taste!! How nice to have a recipe with so few ingredients (and most you have on hand). I dipped the chicken into the bread crumb/cheese mix to get a light coating and then put the chicken in the baking dish. I then pushed the remaining mix on top of the chicken to coat it completely and get all the cheese on top. And NO! Don't use green can parm! Real parm is the best!! :)

Chicken Enchiladas I

This is the best chicken enchilada recipe I've found. It always gives amazing, delicious results. I made a few changes that were minor. I usually use store bought rotesserie chicken and shred it. Then I add El Pato Mexican tomato sauce instead of regular. Finally, I use canned green chile enchilada sauce instead of taco sauce. Delicious!!!

Brown Sugar Oatmeal Pancakes

These were excellent! Tasted almost like a muffin. The recipe was quick and easy. I had a little trouble with the pancakes burning before they were cooked all the way though - so cook on a low heat.
