Lemon Chicken with Broccoli

I used chicken stock and thickened it at the end of cooking with corn starch. Yum!

This was ok, but I felt it had the flavor of the orange & lemon rinds which made it bitter. It was better with served with ginerale.

Cinnamon Popcorn II

This was a good recipe, but I made some adjustments based on other's comments and my own popcorn experiences! I used air popped corn and doubled the recipe. Then I used 3/4 cup butter (instead of 1 c) and let the butter/red hot mixture boil for 2 minutes in the microwave after it had completely melted. I also sprayed a paper bag with cooking spray, mixed the popcorn with the sugar mix in the bag and microwaved it for 2 minutes, stirring after 1 minute. It was crunchy and yummy! Next time I might add cinnamon oil.

Butternut Squash Fries

I really liked the idea of this recipe, but it didn't turn out. The fries were mushy even using a pre-heated stone. I am not sure if it was me or the recipe.

Lemon Cream Pasta with Chicken

Great recipe! I made some changes and it still was tasty! I cooked the chicken the the crockpot with garlic, used a can of evaporated skim milk instead of cream and added fresh basil and thyme. Yum!

Lamb and Winter Vegetable Stew

Good basic recipe. Because of what I had on hand, I only used squash, celery, potatoes and onions. I also omitted the sour cream because we are dairy-free. It was a nice hearty meal!

Brownies-Allergy Free!

We are on a food elimination diet and are searching for anything dairy/soy/corn/peanut/wheat free! These were awesome! I did as others suggested and cut back the oil to 3/4c. and added 1/2c applesauce and 1/4c water to make up the difference.

Tomato Gorgonzola Soup

Great ( and easy) recipe! I doubled this recipe for a ladies luncheon and glad I did! It was a hit! I even used reduced fat cream cheese and half-n-half in place of heavy cream. Although next time I might reduce the amount of cream cheese a bit.

Oat and Herb Encrusted Turkey

This was a good basic recipe, but like other reviewers I made modifications. I used about half oatmeal and half Italian bread crumbs and added 1/4 c wheat germ. I also used 1/2 yogurt and 1/2 milk and the mustard. To try to prevent the crumb topping from drying out I also spray the top of it with EVOO. A great healthy dish!

Lemon Chicken

This was a decent backbone recipe. I liked it because it was healthy and low-fat. I modifed it by adding 3 garlic cloves, 3 carrot, roughly 2 cups of broccoli, adding rosemary, pepper and used brown instant rice. I didn't adjust the liquid for the brown rice and the rice turned out well.
