Halloween Rainbow cookies
Golden Lemon Cake
About this Cook
I work a weird schedule of 12 hour days. On my days off I like to go running, sometimes on the Walkway Over the Hudson. I also like to read, my last book: What Alice Forgot...and I love movies but especially old ones. My favorite actors are Cary Grant, Jimmy Stewart, Ginger Rodgers, Humphrey Bogart, Betty Davis, and Tom Hanks... oh, and I have a soft spot for Jimmy Durante.
My favorite things to cook
I'm really more of a baker than a cook....I make 20+ baskets at Christmas time to give away to friends and family and fill them with jams and my famous lemon bread, about 10 different types of cookies, sugared pecans, and my latest additions: coconut macadamia nut brittle and a holiday pretzel pop.
My cooking triumphs
One of my most requested efforts are the Witches Fingers I often make for Halloween. Basically a sugar cookie, I use a whole blanched almond for the finger nail and add lines to identify knuckles. They taste great but look pretty gruesome. I also made Poopy Pops one year. I placed varying amounts of marshmallows on lollipop sticks, rolled in melted chocolate, then rolled in crushed nuts or coconut, then in chocolate again. Then I dotted some with the yellow part of candy corn and arranged in a large basket with a base of styrofoam. I put a roll of toilet paper in the middle and dotted everything with plastic flies. The tasted wonderful but grossed everyone out. Fun!

PHILLY Bavarian Apple Torte
This was so good and really easy too! I used a 9 inch tart pan. Added a 1/2 teaspoon almond extract to the filling. That alone brought it to a higher level. It is very important to thinly slice the apples to make sure then get cooked. Also, I saw by the pictures that some, if not most, arrange the apples on the top. I was not so careful. Just kind of dumped them on the top and smoothed them out , then sprinkled with almonds. Very pleased with the results. Bakery quality, for sure.

Tender Breaded Turkey Cutlets
Made this tonight ....Thursday, a week night, no less. It was terrific! I followed the recipe , but then topped each cutlet with tomato sauce and shredded mozzarella then put in the oven to melt the cheese . It was really good and even the time of 25 minutes was right on.

Balsamic Roasted Pork Loin
I made this for Christmas dinner for ten people. It was easy and came out perfectly! So so good. I wouldn't change a thing. I'm making it again today for Sunday dinner. Can't wait!
