No-Cream Pasta Primavera

Reviewed: Sep. 19, 2012
Great, quick and delicious way to use up a ton of veggies. Very filling! My husband and 4-year-old enjoyed it. We used zucchini, red bell pepper, green/yellow beans, mushrooms, carrot, and onion as the roasted veggies. Seasoned with dried basil/parsley and decreased balsamic in sauce to 2Tbsp.

Cranberry Sauce

Reviewed: Dec. 5, 2011
Decreased sugar to 3/4 cup, mashed once it had thickened a bit, and it was perfect!

A-Maize-ing Corn Chowder

Reviewed: Jan. 22, 2010
Exactly what I was looking for in a corn chowder! Perfectly sweet and flavorful. I used about 1.5 cups of milk and added some instant mashed potato flakes to thicken it up a little, based on previous reviews. I will make this again and again. Yum.

Apple Oatmeal Crisp

Reviewed: Dec. 22, 2009
I've made this twice now--once as written (subbing gluten-free flour, though) and once decreasing the flour and sugars to just shy of the amounts called for. Both results were fantastic! We'll make this a lot this winter.

Toscana Soup

Reviewed: Dec. 21, 2009
Added a can of white beans, carrots, mushrooms (had them left and needed to use up) and used spicy Italian turkey sausage. Great as leftovers, too.

Baked Delicata Squash with Lime Butter

Reviewed: Dec. 12, 2009
We liked the lime butter (I actually used lemon juice and lime zest) but 30 min wasn't long enough for the squash. It was a bit annoying trying to scoop the buttery squash out at the table, so next time we try this I will scoop and mash it ahead of time and mix the butter into that.

Pumpkin Black Bean Soup

Reviewed: Nov. 9, 2009
An excellent way to use up the end of a can of pumpkin! I added some dried ground chipotle pepper towards the end, and subbed green onion because that's what I had. The pumpkin rounds it out nicely without being overpowering.

Robin's Quinoa with Mushrooms and Spinach

Reviewed: Oct. 25, 2009
We love quinoa; this will be a great addition to our rotation. My 1-year-old ate it by the fistful. We added diced chicken (marinated in balsamic vinegar) to the skillet with the mushrooms. Served with baked squash for a colorful, filling fall meal.

Baked Kale Chips

Reviewed: Oct. 23, 2009
Awesome snack! I only wish I'd made more. Used olive oil spray instead of oil. Will make these OFTEN.

Browned Butter Vegetables with Almonds

Reviewed: Oct. 10, 2009
Too much butter, but great overall end result. Husband loved it. I added mushrooms and used fresh garlic in place of the garlic salt/pepper.

Balsamic Marinated Chicken Breasts

Reviewed: Sep. 28, 2009
Cooking time was a bit long and my chicken breasts dried out a little. Flavor was great! We will make again.

Black Bean Lasagna

Reviewed: Aug. 15, 2009
Added cumin and chili powder to beans, based on other reviews. Skipped the guacamole but included a diced zucchini just to get more veggies in there. We loved how the layers stayed in a stack just like a "real" lasagna. Will definitely make this again.

Mini Frittatas

Reviewed: Jul. 15, 2009
Very good; made for company and everyone loved it. Doubled the recipe, all except for cumin based on other reviews. Still a prominent flavor, but not overwhelming. Subbed cottage cheese for the ricotta and plain yogurt for the sour cream because that's what I had. Great way to use up some spinach! Will make again.

Jenny's Jambalaya

Reviewed: Mar. 27, 2009
Used turkey kielbasa and omitted the shrimp (seafood allergy). Doubled the hot sauce (Frank's RedHot). Husband gave it rave reviews and asked me to add this to our usual rotation.

Potato and Cheese Frittata

Reviewed: Feb. 19, 2009
A good start, but would be bland without some additions based on previous reviews. Added garlic with the onion, shredded Parmesan with the egg, mushrooms, spinach, and cayenne. Great topped with sour cream!

Oatmeal and Applesauce Pancakes

Reviewed: Feb. 15, 2009
Very moist! Be sure to poke a slit in each one with the edge of the spatula when you flip them over. It will help release the steam so the inside gets cooked instead of staying gummy. I added blueberries, which turned out great.

Joel's Jerk Chicken Pineapple Pasta

Reviewed: Jan. 6, 2009
After reading reviews, I decreased the cinnamon and red pepper. Also added sliced mushrooms, a diced red bell pepper, and more pineapple juice + cornstarch to make a sauce. Came out wonderfully flavored (and the red pepper was a welcome touch of color) and not too spicy. Served over brown rice. Will make again, using 2 bell peppers in different colors, and maybe a sweet onion.

Baked Oatmeal I

Reviewed: Nov. 22, 2008
Cut back on the sugar and added some vanilla. Also added cinnamon to the batter. Doubled recipe. Did not make crumb topping and used applesauce/butter for the oil. Added peaches to half and raisins to the half. Got rave reviews at our runners' breakfast! Will freeze leftovers in squares for quick breakfasts this winter.

Aioli (Garlic Mayonnaise)

Reviewed: Nov. 4, 2008
All I could taste was the oil, and I even cut it back. Tried adding more seasonings (lemon, garlic, cayenne and even sugar) to salvage it, but nothing worked. It set just fine but tastes awful.
