Cookies 'n' Creme Fudge

I have tried this recipe in the past and had trouble with it setting up. This time I used 20 oz of vanilla flavored almond bark and worked out good. To avoid the "grey" color - here's a trick. Break cookies into pieces and put them into the bottom of your pan. Then pour the fudge on top and then press more cookies into the top of the fudge. This way there is no stirring and the fudge won't turn grey.

Chewy Peanut Butter Chocolate Chip Cookies

These cookies are awesome! SOOOOO chewy. They lasted 5 days in a tupperware container and are still soft and chewy. I took some of the other advice and cut down the chocolate chips and used 1 cup of peanut butter. I also only baked for 10 minutes. These are delicious. I will definitely be making these a lot!

Raspberry White Chocolate Mousse

I used this recipe for a New Year's Eve dinner party because I had two pregnant guests and didn't want to serve raw eggs. It was very easy to make and had a nice light taste. It was a great finisher for a heavy dinner. I bought Keebler waffle cone cups and painted them with melted chocolate and then piped in the mousse. I drizzled extra raspberry sauce on top and then added fresh raspberries. I also drew designs in the plates with raspberry sauce and then put the cups on them. I used a squeeze ketchup bottle from the grocery store for the sauce. This made a great elegant dessert that actually wasn't all that hard to make. I will definitely make this again! It got raves from the guests.

Rachel's Cream Cheese Fruit Salad

The dressing for this salad was really good but I had to make the salad the night before so I used fruits that wouldn't brown or breakdown. I used honeydew, cantalope, watermelon, grapes, strawberries, and blackberries. The dressing was really yummy though.

Raspberry Tea Sparkler

I made this for a baby shower and we went through two large pitchers. For a pretty touch, I floated frozen raspberries. It makes it looks a little fancier and helps keep it cool without diluting.

Strawberry Lemon Muffins

These come out delicious and quite moist. I used frozen blueberries (drained and rinsed) and the flavor was very good. Topped with sweetened cream cheese, they were a big hit.

Dilled Shrimp Salad

I used this recipe for a baby shower and made finger sandwiches on sour dough bread. It was really yummy. I used some extra dill and added a pinch of salt. I think I will slightly less lemon juice next time because it was a little runny or maybe increase the mayo but it was really good and was a big hit. Thanks!

Holiday Chicken Salad

I used this recipe for finger sandwiches for a baby shower. I left out the green bell pepper and served it on wheat bread. It was super delicious and got rave reviews from everybody that tried it. I will definitely make this again!

Yummy Pork Chops

This actually comes out tasting like stir-fry which is interesting because of the Italian dressing. Very easy and tasty. Mu husband and I both enjoyed this dish. Great with rice.

French Toast Souffle

This recipe needs a lot of additions because otherwise it is pretty bland. I used cinnamon bread and the sprinkled the bread with a lot of cinnamon, brown sugar, and some nutmeg. I also drizzled the bread with maple syrup before adding the egg mixture. I thought the amount of eggs was okay but it needs to bake for at least an hour. When it comes out of the oven, I pour a little more syrup on the top. My friend actually has a better recipe for this same kind of souffle and I will have to post it some time.

Pumpkin Cheese Bread II

This recipe is awesome! It always turns out super moist and the cream cheese middle is a great surprise. Like everyone else, I have found out that this bread turns out a little flat. However, once people take a bite, nobody cares that its a little flat. I tried it in a bunt pan and that works great too. Great recipe!

The Way to a Man's Heart

I used this recipe for a dinner party and it was a huge hit. This is definitely not for everday consumption but is great when you need a "fancy" dinner. I did make a lot of extra sauce so it covered the fish in the ramikins and then completely covered them in crab and cheese. The ramikins are great for a dinner party because each person gets an individual serving, a nice touch. I made this early in the day then put them in the fridge. Then before dinner, put on the cheese and browned while everyone had cocktails. Very little work during the actual party. A couple people thought the overall taste was a little like lobster. I am going to try next with monkfish. Great recipe!
