Beet Soup

I got a bunch of beets in a box of produce this week and I wasn't sure what to do with them so I tried this. I was pleasantly surprised with how it turned out. I followed the recipe except that I used chicken stock. If you're a beet person, then I'm sure you'll like this!

Salsa Chicken Rice Casserole

I made a few modifications that others suggested to make it a bit healthier! I used brown rice, 1 can of fat free cream of chicken soup, used less cheese, and added some frozen spinach. It was easy and very tasty!

Butternut and Apple Harvest Soup

This soup is awesome! I made some adjustments, mainly because it's what I had on hand. I did not have leeks so I used some extra onion. I used gala apples (what I had). I didn't add the white wine. I also chose to leave the skin on the potato and apples and to skip the cream to make it a bit healthier. Once you blend the soup, the skins just get nicely mixed in! The soup smells heavenly while it's cooking and makes a great fall meal!

Shrimp and Asparagus

You can't go wrong with anything that calls for a sauce made of olive oil, butter and garlic. Altogether it probably took me about 20 minutes to make everything, if you do the steps simaltaneously, so it is a very quick and easy dinner. I skipped the mushrooms because I didn't have any, but added onions and some diced tomatoes at the end. Delicious!

Mint Chocolate Chip Cookies

These cookies were excellent! This was a lot of chips for the amount of dough so to save a few creme de menthe chips I might reduce it to 3/4 cup of chocolate. I also did not use the food coloring since I didn't have any and it turned out great!

Easy Fruit Cobbler

I made this recipe with apples. I added vanilla and cinnamon to the batter and also spinkled cinnmon on top. Considering how easy it is to make and the awesome flavor, I had to give this recipe 5 stars!

Baked Pork Chops I

As a recovering vegetarian, I have been sticking to mostly poultry. This was my first experience with pork in about 10 years. So, take my comments with a grain of salt. I followed the recipe exactly and found that it was really salty. But it could just be me since my husband, an avid meat eater, thoroughly enjoyed it.

Zucchini Quiche

This was a hit! I used to use a very basic quiche recipe but one day just decided to try something new! This recipe has tons of flavor from all of the herbs. It also has a lovely texture with the ricotta. I took the advice of others and used the box grater to cut the zucchini. It turned out great!

Zucchini with Basil Cream

This was a very easy recipe that helps you use up that summer produce! My husband absolutely loved it. I didn't have cayenne pepper so I replaced it with chili powder. I also doubled the amount of parmesan instead of using mozzarella. It had lots of flavor and is a great summer dish!

Mama's Italian Wedding Soup

This was a very simple and delicious recipe! I used 1/2 lb ground turkey for the meatballs and cooked them in the oven first (this ended up being plenty of meatballs). I added celery for some added vegetables. Overall, it was very yummy!

Fantastic Black Bean Chili

this was awesome! i used two 15oz cans of diced tomatoes, black beans, kidney beans and corn. i also added more chili powder. it ended up with a great chili taste but also with a subtle sweetness. this will definitely be my regular chili recipe!

This was a very easy and pretty tasy recipe! I added garlic powder, salt and pepper to the turkey while it was cooking which made it smell really good. Had lots of flavor!

Baked Salmon Fillets Dijon
