Annie's Fruit Salsa and Cinnamon Chips

This is great! I personally make a "poor man's" version. I leave out the raspberries and kiwis, but add in grapes. You don't miss them and makes this recipe much more affordable. Also, rather than chop up all the fruit, I toss them in the blender and pulse until the consistency is about right. Saves a lot of headaches! AND, rather than make the chips, I use regular tortilla chips, spray with cooking spray, sprinkle with cinnamon and sugar, then put in a 350 oven for a few minutes. Take them out, stir, and repeat until the chips have enough sugar and cinnamon for your tastes.

Homemade Butter

This was fun to make in my Kitchenaid. It worked out very well. I did do a cost comparison between making it with cream versus buying packaged butter. It cost me $2 for a pint of cream and I got one cup out of it. Packaged butter is running about $2.25 right now and I get 2 cups of butter from it. SO, packaged butter is less expensive by about half, but making the butter is fun!

Thin Mint Crackers

These are great! For those of you out there, like me, who only have mint extract (not peppermint extract) on hand, simply use half mint half vanilla extract. It tastes great. Also, if you'd like to make this recipe a world easier to make do the following. Melt your chocolate and add the extracts. Crush all your Ritz crackers into the melted chocolate and mix well. Then, you can either drop them on the wax paper like drop cookies and pop them in the freezer for 5 minutes, and your done. OR Put one layer of wax paper on a cookie sheet and dump the cracker/chocolate mixture onto the sheet. Put another layer of wax paper on top and smooth it out. Pop in the freezer for 5 minutes. Pull out and use cookie cutters to cut out shapes. This is much simpler, tastes the same and cuts down on clean up tremendously!

Rolled Dumplings

Caramel Popcorn

This is a great recipe! To save yourself the cleaning headache, dump the popcorn and caramel into a large paper grocery bag and shake. No bowls to clean! I only cook this for 45 mins, stirring every 15. I drizzle chocolate over the top. It's a great addition. Very tasty!
