My cooking triumphs
I made that never fail fudge stuff on the side of the fluff container without screwing up. I've heard that many people can't actually do that.
My cooking tragedies
I cheated and used a pre-made graham cracker crust from the store for my famous key lime pie. Upon removing it from the oven, the weak tinfoil pie pan folded under the weight of the pie and decorated the entire inside of my oven and most of the kitchen with key lime goodness. I had to be out the door in 10 minutes to get to Thanksgiving dinner an hour away.

Gorgonzola and Wild Mushroom Risotto
Had to mess around with the amount of each ingredient, especially the risotto and the stock, but I've made this multiple times and love it!

Healthier Soft Oatmeal Cookies
My changes: 1/4 cup stevia in place of 1/2 cup white sugar 3/4 cup raw coconut crystals in place of brown sugar 2 cups of all-purpose flour in place of 1 all-purpose and 1 whole wheat. I just ran out of whole wheat or I would have used it m 1/2 cup simply smart omega-3 spread and 1/2 cup apple sauce in place of 1 cup of butter 2/3 cup dates in place of 1 cup dates 3/4 cup of raisins Came out great! Picky the kid (3 yrs) loves them!

Dark Chocolate Cake I
I made a coconut cream cheese frosting to go with this cake, and put it in 2 8x8 inch pans instead of the 3 round. It was amazing, according to my lover, who ate it without use of untensils (hey, it's his birthday, his cake. He can do whatever he wants.) He did give a piece to his father who then said "I hope she is a keeper, because this is delicious." My roommate also liked that it was very moist. I myself have yet to try it.
