Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

OMGosh... this is the best... just like when I was in Thailand! LOVED IT!!! The only difference was the rice from Thailand was steamed in a bamboo basket... but that would be more work.

Salsa Chicken

This is such an easy... yet such a great dish. My husband just loved it. So did I. I used the taco seasoning like a rub and then sauted the chicken in butter. I poured homemade salsa on top and let the juices run around the chicken. I covered the top of the wok in alluminum foil to keep the steam from escaping and let it steam about 8 minutes. The chicken was so tender and juicy. I made white rice in vegetable stock and served the chicken on top. I also served a fresh salad sprinkled with a little taco mix. The taco mix gave the salad a great taste, and we didn't need any dressing which saved calories. I also served a vegetable on the side. This was truly such a wonderful meal. My husband requested it again the next day! because I sauted it in the wok instead of baking it the taste was a little richer. The butter added to the taste and the sauce it created was wonderful on the rice. (Edited April 21, 2011... I regularly use Rotel instead of salsa... which is usually homemade... but I would note that if you use rotel instead of the salsa you should dice up some onions to add since it better resembles a salsa in the end)

Blackened Tuna

OH MY!! This was awesome. I was marinating tuna for dinner the next day and had one extra tuna steak... so tried this recipe. I honestly wasn't expecting too much, but BOY was I wrong. I can't wait to buy some more tuna steaks so I can prepare this for my husband. This is my favorite way to prepare... and EAT tuna now!!

Peanut Butter Crunch Apples

Oreos worked really good here too. I also sometimes just dip the bottoms in the cookies and it gives a nice presentation. A trick I use is to dip my apple in the caramel then drizzle it with the dark and white chocolates. I let that set for a few minutes while I dip several apples. I let them set up on a cookie cooling rack with a cookie pan (covered in foil) underneath to catch the drippings. Then I re dip just the bottoms of the apples in the caramel and then cookie crumbs. It gives a great presentation and looks very pretty when wrapped in clear cellophane tied with a ribbon or raffia. Update... I also wanted to mention That the apples are usually dipped in boiling water for a few seconds to remove the wax, right? Well, since I make these every year I do something a little different to remove the wax now. I open a new "Scotch" scrub sponge and scrub the apple under hot running water. Apples dropped in the boiling water tend to discolor a little. The taste isn't altered, but I just didn't like that discoloration. The scrub sponge works great!!

Grilled Salmon I

This is the best. I've made it several times and my husband and I just love it. The first time I made it I wasn't so sure how well the soy sauce and brown sugar would taste with salmon, but I am so glad I tried it. It's a keeper for sure, and we'll be making this often. Thanks for sharing!!!

Sugar Snap Peas with Mint

This was wonderful! I love the freshness of the dish as well as the ease of preparation. I didn't use quite enough fresh mint... my mint plant is doing a little puny this season so was afraid to cut too much. Next time I'll use the full amount as it could have used more. I loved this dish... and so did my husband.

Broccoli Chicken Divan

This was awesome... I changed it up a little but have made it as written also. My recommendations would be to use Bear Creek cheesy broccoli soup mix made per directions on package and add a little cooked rice for a more hearty meal... or I've even placed the rice on my plate and served the broccoli chicken divan over it. Yum!!

Homemade Noodles

These are wonderful. This is also a fond childhood memory for me. I remember going to my grandmother's home and sitting to watch her roll out and cut her noodles. She made the best noodles, bless her heart. She's gone now, but her homemade noodles live on. My aunts and mother would make homemade chicken and noodles on special occasions as all the family (aunts, uncles, cousins and more) would gather to enjoy this wonderful and hearty meal. One suggestion though is to roll the noodles thin enough or else they are rather dry in the middle and even though the taste is good... they are a bit too thick. These also go well ith homemade biscuits. UPDATE:: A good trick for cutting the noodles is to roll them thin and use a pizza wheel to cut out the strips. It works great!!

Slow Cooker Italian Beef for Sandwiches

Wonderful, Wonderful, Wonderful!! I made this for family visiting out of state and everyone raved. I used 2 Italian seasoning packets but will use 3 next time. I also added the juice from the jar of pepperoncini jar. I added about 1/2 a jar of the pepperoncini's and then kept the jar available for those who wanted to add more to their sandwich. My mother doesn't like spicy food but she loved this. All the rest of us added more pepperoncini's and the beef was gone in one sitting for 4 people. I made homemade rolls and they complemented this meal wonderfully!

Beth's Spicy Oatmeal Raisin Cookies

These are wonderful! I make them all the time for my husband. I always double the spices since these are pretty mild otherwise. I usually make a big batch of dough and keep it in a covered container in the fridge. They store well and my husband gets fresh cookies whenever he wants. Thank you so much for sharing... we LOVE them!!

Pumpkin Pie Cake I

This is one yummy dessert. I used the cake mixture on the bottom as a crust as others suggested. It was very good, but I might try it as stated in the recipe. My "crust" tended to bubble up and form waves instead of staying an even layer. If I try this again... and I'm sure I'll try it again... i'll only use half of the cake mixture since I loved the pumpkin taste and would have liked a little more of that yummy pumpkin in each bite. This is an easy and tasty dessert that I'd reccoment to anyone.

Sugar Cookie Frosting

This recipe works great but I also have a tip... When mixing your ingredients, always mix the wet ingredients together first... then add your dry. That way you avoid the lumps that others have mentioned. If you just mix the sugar with the shortening and add the liquids later you're going to get lumps! Also, always sift your powdered sugar to get the lumps out of it before you even start. If you have a Kitchenaid mixer (like I do) you probably can eliminate the sifting step since the mixer is a miracle worker and never gives me lumps.

Fourth of July Ice Cream Cake

This is a great recipe. My SIL asked for an OREO cookie ice cream cake for her 50th birthday. I varied the recipe a little and it was wonderful. A hit all the way around. I noticed one reviewer on here mentioned that her cake crumbled during the cutting of the angelfood cake and I have a suggestion. Before cutting the cake into layers you should freeze it. As a cake artist and baker I can tell you that frozen cakes cut better and keep their form as opposed to warm or freshly baked cakes. Once cut and assembled the taste is just as good as that out of the oven, but you are able to do so much more with the cake as far as carving and creating interesting shapes.
