Sugar Snap Peas with Mint

This was wonderful! I love the freshness of the dish as well as the ease of preparation. I didn't use quite enough fresh mint... my mint plant is doing a little puny this season so was afraid to cut too much. Next time I'll use the full amount as it could have used more. I loved this dish... and so did my husband.

Linda's Lasagna

I have this dish baking in the oven as I type. I'm so excited since this is my first homemade lasagna. I stuck to the recipe except that I didn't have the cottage cheese on hand so omitted it. I cooked the sauce in the crockpot for an hour after I browned my meat and carmelized the onions. The sause tastes great!! It is a tiny bit sweeter than I would have prefered, but I think as it simmers it melds the taste and is wonderful. It should be coming out of the oven in about 20 minutes and I can't wait. Also, I added a few veggies... mushrooms, celery... etc. Thanks Linda for sharing such a great recipe!!! UPDATE:: I make this about once a month or more... I add hot Italian sausage to it sometimes and often add veggetables to it as well. It's a great, easy dish and I usually make two 8X13 pans and freeze one for later. I used to always boil the pasta before layering the dish but not anymore. Now I just layer the dish... let it sit at least over night and then bake. The trick to avoiding that gummy texture is to bake it a good hour. If it is underbaked (30 minutes or so) the pasta is gummy. Give it a good hour to bake. I've made it with both ricotta and with cottage cheese. I prefer the cottage cheese... besides it's cheaper. Cover the dish for most of the baking time... then uncover the last 10 minutes to avoid burned cheese.

Garlic Mashed Potatoes Secret Recipe

These were good! I may use a little less garlic next time... and make sure to use top quality cheese (it makes the difference)but these are a keeper.

Savory Montreal Steak Rub

Taco Salad I

This was good. I was craving a taco salad and wanted to use up some lettuce before it went bad. I liked it, but the dressing was a little too sweet... and I only used a half a bottle. Next time I may just use 1/4 a bottle or less. Also... the lettuce wilted which was expected, but not very appealing.

Grilled Salmon I

This is the best. I've made it several times and my husband and I just love it. The first time I made it I wasn't so sure how well the soy sauce and brown sugar would taste with salmon, but I am so glad I tried it. It's a keeper for sure, and we'll be making this often. Thanks for sharing!!!

Chicken Pot Pie IX

Update: After making this several times I now saute all my vegis together in the butter. The celery, carrots, and onion saute nicely and have a better flavor. I then add the precooked chicken to the pan and toss it around in the butter sauce a few minutes. It gives the chicken a nice coating before adding the seasonings and flour. Let the seasonings toast for a minute before adding the broth and milk. I prefer vegetable broth since it has a better taste than chicken broth. It's a richer broth and very low in fat. I do add celery salt and poultry seasoning. I also add a little garlic. When I place the top crust on the pie I brush with butter and sprinkle with a touch of garlic salt. The first time I made this I added cubed potatoes, but I think it really took away from the pie. I would suggest serving mashed potatoes on the side if you really want the potato. Maybe serve the pie on a mashed potato bed. I do reccomend the recipe and suggest adding a tad more gravy since it is a little dry as posted. Making a little gravy and serving it on the side is a good idea since some like it semi-dry but the extra gravy is good especially as the leftovers dry out so much more. Still, a good recipe and highly reccomended!! YUMMY!!! What else can I say. I made this for my husband about a week ago. I added some garlic to the filling and it was more than yummy. I loved the crust as well. Nice and flaky... just the way we like it.

Beth's Spicy Oatmeal Raisin Cookies

These are wonderful! I make them all the time for my husband. I always double the spices since these are pretty mild otherwise. I usually make a big batch of dough and keep it in a covered container in the fridge. They store well and my husband gets fresh cookies whenever he wants. Thank you so much for sharing... we LOVE them!!

Colleen's Potato Crescent Rolls

You know... I make a lot of breads and rolls, but after my husband tasted these he said, "You can make these from now on." He loved them! I used instant mashed potatoes instead of boiling my own (only because I was all out of fresh) and they still tasted wonderful. I also loved how they rose in the fridge. These are so light and fluffy. Thanks for sharing!!!

Yummy Honey Chicken Kabobs

These were very good. I added the pineapple to the skewers as well as some tomatoes and mushrooms that I marinated overnight with the chicken, onions and peppers. The taste was OK (for me), but my husband LOVED it. It's a personal preference I'm sure. I'll make again, although I may add white rice as a side dish. I had an unexpected emergency and so we ended up just eating the kabobs. I think I just needed something else.

Alyson's Broccoli Salad

I've made this recipe several times now. Everyone I served it to just loved it. My mother in law even asked me for the recipe. Simply the best!! YUMMY!!! UPDATE... use fresh broccoli! Someone in here suggested using frozen broccoli and foolishly I made it that way ONCE. It was nasty!! It tasted like wilted salad that had been sitting in my fridge for a week. The best advice for any cook is always use the best, freshest ingredients and your dishes will be well received.

BBQ Pork for Sandwiches

This tastes awesome! I'll tell you my secret. This may sound weird, but... I put my pork butt in the crockpot, cover with water and about a cup of strong coffee. YES, I said coffee! I let it cook overnight and then in the morning I remove the pork, shred it, add a bottle of good quality BBQ sauce (don't use a cheap brand) and place on homemade buns (squash rolls from allrecipes is awesome). I love this recipe! It's very filling, and for my husband and myself... we don't eat much pork... so this is a treat!

Jambalaya II

This was awesome! I've never made jambalaya before so was a little nervous, but it came out wonderful. My husband loved it and even went back for seconds (he never eats seconds). The next day he ate the leftovers for lunch (didn't even save me any, lol). This is a new favorite... can't wait to make it for company!!!

Winter Squash Rolls

Thia is an awesome recipe! I made it last night for my husband and I. We used it... adding bbq pork... for dinner and it was the best. We loved it! I made 8 large rolls with a halved recipe. It was so good that I went back and made 3 more batches and froze the rolls (made smaller this time) in the freezer for use later. I also love that these used my squash which has been sitting around waiting for a good use. I had already pureed it... assuming I'd use it in sweet bread... but this is sooo much better. Thanx Mitchell!!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Whipped Cream Cream Cheese Frosting

OMGosh, this frosting is pure heaven!! I loved it. I was actually walking around with the frosting in the pastry bag and asking everyone in my family to taste it. I'm not sure what everyone was talking about when they said it doesn't pipe well. It held up great and piped wonderfully. I'm thinking maybe the others just didn't whip it long enough. MINE PIPED AWESOME!!!
