Mom's Zucchini Bread

This bread has a light, sweet, and crispy crust on top that is quite satisfying. It would be difficult for even the most novice of bakers to mess this one up!

Easy Eggless Chocolate Cake

I found this cake to be most like prepackaged cake mixes than any other I have tried. Although I am usually a from scratch baker, I haven't found a from scratch cupcake recipe I really like that is as moist and yummy as Pillsbury or Betty Crocker...until now! This recipe fit the bill. I will no longer be subjected to the supermarket prepackaged cake mixes in order to prepare something that is quick, easy, and delicious. I received rave reviews and did not experience the "glue-like" taste others noted. In the future, I would like to try it without the cocoa and see if it passes muster as a vanilla cake, too. If anyone tries this, please post it!

Ground Beef Shepherd's Pie

This did not go over well with my family. Although I added some oregano and someone else suggested, I still found it to be bland and the potato mixture to be sparse. I added additional potatoes. A seasoned cook can probably liven this up, but I am more of a by the book cook.

I think I'll decrease the cloves by half next time, as others have suggested. My very picky sister, who HATES veggies in anything, asked for the recipe, so it must be good!

Easy Chicken Enchiladas

I can not believe how easy this dish was to prepare. The result was scrumptous--hard to believe it only has a few, simple ingredients. UPDATE 10/27/2011 - By following the recipe exactly as far as the filling, I was able to make 13 enchiladas from a 22.5 oz package of 20 flour tortillas. Still one of my kids' all time favorite dinners!

Kentucky Biscuits

I tried this recipe because it called for butter rather than shortening. I am trying to avoid "partially hydrogenated" anything and this fit the bill. These biscuits truly are delicious and very light. The dough was a bit too sticky so I sprinkled flour on it generously before kneading and it didn't seem to impact the final product. We enjoyed them with some sausage gravy. Mmm, mmm, good!
