About this Cook
I'm married w/2 school-aged children. My husband and I both enjoy cooking and we refer to Allrecipes as our go-to spot for new recipes all the time. My biggest motivators are easy, healthy and delicious (not necessarily in that order!).
My favorite things to cook
Roasted chicken dinners, anything on the grill (YUM!), and I love to do a gourmet meal once in a while (for special occasions like anniversary, special guests) like filet mignon or chicken remoulade. I love standard casserole dishes like goulash and my mom's traditional potato and sausage casserole.
My favorite family cooking traditions
We like to bake pizzas with the children, and make cookies and other fun/easy dishes with the kids.
My cooking triumphs
Every Christmas for the past few years, we have prime rib for the entire extended family (about 17 people total). I have a fool-proof recipe I got from a sister-in-law years ago and it's perfect every time! Everyone always raves about it, that's why we have it every year. Have been using Martha Stewart's perfect turkey recipe for Thanksgiving every year and it is excellent, the best turkey anyone in our family has ever had, hands down. One year the guys decided to deep fry a turkey and it was horribly dry, so back to Martha's recipe it was.
My cooking tragedies
I once attempted to make potato salad for a family get-together and overcooked the whole 10 pounds of potatoes, turning it to mush. Wasted all the ingredients and had a virtual melt-down in the process. I have never been so upset at myself ever!

Apple Crisp II
I doubled topping as many other reviewers did. This was FANTASTIC! Yum with high quality vanilla icecream!

Spicy Garlic Lime Chicken
Very yummy! I doubled the recipe as my chicken breasts were very large. I could have laid off the spices about 1/4. Maybe mix up a full batch of spices but only put about 3/4 of the mixture on. I like spice but it was almost overkill. I did not use as much cayenne - just sprinkled a bit - to keep heat down. Nor did I sprinkle the extra garlic powder at the end - that would totally be overkill. Like another user I put 1/3 c chicken stock on with the lime juice at the end. then ladled sauce on chicken when plating. served with a homemade rice pilaf and the whole family was happy!

Quick and Easy Goulash
Very good! Looking for a recipe for "this kind" (vs. Hungarian) of goulash that my mother used to make us when I was a kid. My son is gluten free so I subbed Ancient Grains quinoa elbow noodles instead - first time I've used them and they were DELISH! I remembered mom's being less "Italian" so I used 2-14 oz cans of small diced tomatoes in juice instead of spaghetti sauce, and I used mozarella instead of cheddar. Added garlic, salt and pepper to taste. It was SO good! I like celery in mine so I sauteed some celery and put it in my serving, knowing my son might not eat it if he saw too many veggies. He loved it, and usually he won't try anything new!
