Chicken Enchilada Casserole II

We left the tortillas out of the dish and served the casserole wrapped up in them instead, as a filling. Incredible! Sooo cheezy and delicious, and great reheated with chips!

Chuck's Favorite Mac and Cheese

The cheese & noodles were absolutely delicious! There was way too much breadcrumb topping though. It coated the top so much you couldn't see the noodles. Next time I'll halve it.

Real Sopapillas

These were delicious but a little too crisp for my taste. I like them nice and soft. :) Still, they were really good and very simple - the recipe halves wonderfully but still makes a ton!

Honey Cornbread

This is delicious, though next time I'll cut the sugar down a very small bit. Perfectly soft and slightly grainy, it was a good contrast and "soaker" for our chili. My little guy loved it warmed with butter and honey the next morning for breakfast, too.

Best Buttercream Frosting

Absolutely delicious and a great template for other flavors/extracts. To avoid flour lumps I made a roux. I took 4 tablespoons of the butter and melted it in my saucepan, then stirred in the flour. I cooked it this way for a few minutes to cook out the "floury taste." I slowly added the milk while whisking. This way is much faster, it thickened up right away. I cant recommend this recipe enough! Sooo fluffy! Very good on coconut cupcakes and chocolate cake. (When cooking the flour/butter it formed a ball... maybe this part was accidentally left out of the recipe?)

Lemon Pasta Sauce

This was pretty good, but not great. If I were to make it again, I'd sub. chicken stock for the beef broth. The beef was just too strong of a flavor with the lemon.

What a wonderful bread! I made no revisions and it came out beatifully! It makes a wonderful sandwich bread, and is one of the few that you can slice thinly.

Buttery Soft Pretzels

Love this recipe! I've made it many times now, each time they came out perfect. The dough also makes delicious pretzel dogs when wrapped around smoked sausages... yum! :D (I do add a small amount of extra water, though not at the beginning. The amount varies with the humidity.)

Excellent! I made them all at once as well. It was definitely a very soft and delicious dough! I added a 1/2 cup of chopped walnuts to the filling, we've a young nut lover here. ;-)
