Easy North Carolina Barbeque

Wow! I followed the recipe - although I had a boneless pork loin - and I can't believe how perfect it is! I thought it might be too hot with the hot sauce and red pepper flakes - but it turned out just right and is getting better by the day! I will definitely be making this on a regular basis!

Easy Cranberry Chicken

Truly fabulous tasting and super easy to make! I also think that cranberry sauce with whole cranberries in it would be great in this too - but it's really good just how it is!

Pretty good - 5 eggs would be better (I only had 4) and possibly a bit less ricotta and more shredded cheese. Some sausage would be great too!

Classic Pot Roast

Reasonable - maybe I needed to cook it longer? I had a 3.88lb roast and cooked it for 2 hours. It came out done, but maybe it needed a bit more time to really make it fall apart nicely. It's good - I think it will be even better as leftovers - of which there are plenty!

Sweet Potato Minestrone

excellent - I added 1/2 fresh serrano chili finely chopped. The 'first taste' after the 30 minutes simmer was good - the broth was sooo good - and the veggies were nicely cooked but I think needed more time to soak up the spices. The 'second taste' was really good - can't wait til tomorrow! Great way to get a lot of good low cal veggies in!!

Baked Sweet Potato Sticks

These are one of my most favorite items to eat and they are soooo easy! I cut them thinner also - even my 10 yr old son loves them! This is a quick, easy, foolproof recipe (even though it takes a while to cook!) A family favorite.

Spicy Chicken Curry

I had to make some substitutions, but I was amazed how good this was! I only had 1/2 white onion and a whole purple onion and only 1 fresh green chilie pepper - so I added a can of diced green chilies as well. I also had to mix up some ginger powder and minced garlic to get the ginger garlic paste. Also to make a good curry without curry! Who knew? I also thought only 1 lb of chicken wasn't going to be enough - but it really is. I served it over white rice, which was great and I think it will be great and even more filling over brown rice...

Egg Casserole

I made it with diced, cooked ham that I browned a bit. Very good and easy - probably better with sausage - only cause it needed a bit of salt and pepper! Definitely going in my recipe box!
