Good Old Fashioned Pancakes

Love this no-fail pancake recipe. Today I added to the batter 1 banana, brown sugar and cinnamon and mashed it up. Tastes like banana bread. So yummy!

Award Winning Soft Chocolate Chip Cookies

I tried this recipe today for the first time and it was a hit! I mixed everything by hand and was weary because the dough was so thick but in the end it all came together, and gave my arms a great workout! I halved the recipe and used a generous ice cream scoop to form the cookies, giving me 20 cookies. I also pressed them down gently with a spatula before baking them. Mine baked for 14 minutes and were still soft when I pulled them out of the oven. I made minor adjustments: 1.5 cups of chocolate chips, chocolate fudge pudding, extra vanilla and some cinnamon. Great recipe, I'll definitely use this again.

Green Bean Stir-Fry

Really yummy. I made a few adjustments though. I added an extra clove of garlic, omitted the sesame seeds (didn't have any), a pinch of red pepper flakes, and pretty much just eyeballed the other ingrediants. I also stir fried the beans in sesame oil and as they were cooking, added the sauce mixture so the garlic had a chance to cook and the sugar could caramelize. The sauce turned out really thick and gooey and coated the beans perfectly. Better than what you'd get at a restaurant!! I'm editing to add that I used a couple of tablespoons of water to deglaze the pan while cooking the beans.

Scrambled Eggs Done Right

This is the only way I make scrambled eggs now. It's so fluffy and delicious. I always season them after otherwise I find the texture is off.

Scott's Buffalo Wing Sauce

Great recipe! Small suggestions: cut down the butter, use vinegar for that tang, and you can substitute brown sugar for the honey. Just make sure you use about a tbsp of sugar (maybe less if you don't want it too sweet). My family likes a tang in their buffalo sauce so that's why I added the vinegar. I use that asian hot sauce (squeeze bottle) so I just eyeballed the amount and tasted it for the correct amount of heat. Very good sauce.

Eclair Cake

I made this Monday night for dinner on Tuesday and was a bit skeptical because I didn't have a chance to test it out beforehand. But everyone loved it and raved about it. The person I was most worried about was my boyfriend because he doesn't like mushy desserts (eg. tiramisu) and he loved it the most! The graham crackers didn't get soggy but soft and still had a bit of texture. I used cinnamon graham crackers and vanilla pudding (I wanted to use white chocolate but they only had sugar free) and canned frosting. I didn't find the dessert sweet at all except for the frosting. In fact, I will use only half a can next time because I had some left over and thought there was too much on top. Oh and I also nuked the can in the microwave to make spreading easier. Very quick and easy dessert and I like that I can play around with the flavours. Thanks for the recipe!

Fluffy Pancakes

Just made these pancakes and followed the recipe exactly, just minused the salt because I used salted butter. I also added vanilla because my mom told me anytime I use egg in baking, use vanilla. Or in savoury dishes to use vinegar because it gets rid of any egg smell. I wanted something other than plain pancakes so in a small bowl I mashed up 1 banana, 2 tbsp brown sugar and some cinnamon. I added my egg and melted butter to this bowl too to make it easier to mix. Let me tell you, these were incredibly fluffy and so delicious! Definitely a keeper!

Creamy Au Gratin Potatoes

So good and creamy!! I added minced garlic to the cheese sauce and pepper. I prepared this in layers: potato, onions, s&p, cheese sauce, potato, s&p and cheese sauce. In the last 10 minutes I took off the foil and turned the broiler on and added some grated cheese in the last 3 min or so. Can't wait to make it again!

Oatmeal Chocolate Chip Muffins

I just made these tonight and they turned out pretty good! I made some adjustments though. Like most reviewers I cut the amount of baking powder and oil. I used half the oil and added 1/4 cup of OJ (you could taste the hint of orange), some vanilla, and cinnamon. Also, my dad wanted raisins so I put 1/2 cup of raisins and 1/4 cup of choc. chips. I'm allergic to nuts so I omitted those. But I added some extra cinnamon to the brown sugar topping and it was great! The only problem, they didn't rise much. But they were still soft, moist and delicious.

Carrot Cake III

I just made this today and it turned out very good. I made 1/2 the recipe, used brown sugar instead of white and sprinkled the nuts on half because I can't eat them. It was super soft and moist....but I gave it only 4 stars because I felt it lacked a bit in the flavour department. I make a vegan carrot cake and that's packed with so much flavour. This one is good but a little plain. It leaves room for additions so that's good. Maybe raisins, coconut, pineapple, nutmeg, etc. I forgot to add that I didn't use any frosting because we prefer our cakes without.
