Molasses Sugar Cookies

First of all, be careful which lever you are pulling on the Kitchen Aid - thought I was locking it and pulled it on FULL SPEED after adding the flour :( Once the explosion was all cleared, I finished mixing it, rolled it into balls, rolled it in granulated sugar and put it in the fridge while the oven came up to temp (didn't bother with the overnight or 3 hour chill). Baked them off, and they are fantastic! The only thing I did different was half the recipe (no big deal, still got more than 3 dozen), use half brown and half white sugar (as per a review), and omit the cloves (which I hate). I will DEFINITELY make these again. AND, I will be more careful with the levers :)

Extra Easy Hummus

I used a 19 oz. tin of beans as it was all I could find. As per other reviews, I added more garlic (3 cloves), halved cumin, and added a tbsp. lemon juice. I LOVE it!! I serve it drizzled with olive oil, and finely chopped roasted red pepper. This is definitely something I will make over and over again!

Adrienne's Cucumber Salad

I used the calculator to cut this recipe down to serve 2. I also salted the cucumbers and let them sit for a while before rinsing thoroughly with cold water to wilt them a bit. Hubby and I both thought it was a nice change, it was good.

Homemade Sage Sausage Patties

I didn't have buttermilk so I substituted milk and lemon juice; also used fresh sage (1 generous tbsp finely chopped) as I had it on hand. I'm not sure that the cheese gave any extra flavor, so maybe next time I will use sharp cheddar. I mixed all the ingredients then left it in the fridge for a couple hours before I shaped and fried them. My hubby and I both thought these were delicious, and I will definitely make them again.

Asparagus Wrapped in Crisp Prosciutto

I had these at a very expensive restaurant in Calgary and have been dreaming of these ever since. These are absolutely fabulous! I rated a **** because I did these on a lightly oiled barbeque instead of in the oven. I turned them as the prosciutto got carmelized and crisp. If you parboil the asparagus it will be overcooked!! To cut the salt a bit and add extra flavor, throw a half a lemon on the grill to char a bit. Squeeze it over the spears before you serve it (that's how they did it in the restaurant) and you won't be disappointed!!

Focaccia Bread

I made this to bring to the neighbors last night. As per other posters, I did proof my yeast first, and let it rise quite a bit longer. I brushed the top with olive oil, sprinkled with coarse salt and fresh chopped rosemary, and added fresh grated parmesan the last couple minutes of baking (no mozza). We dipped it in balsamic vinegar and oil and it was delicious! My only complaint is that it was gone too soon! I will definitely make this again :)

Light Wheat Rolls

The dough for these rolls was very easy to make. As suggested by another poster, I spread garlic butter on the strips before rolling them. I found this to be a little fussy, as the rolls weren't all the same size. I baked them (2 dozen) lined up on a baking sheet. I froze them and pull them out to pack in my kids lunches, and they love them! I definitely like the lightness of the rolls so I will make them again, but maybe not swirl them.

Honey Mustard Dressing II

I have been trying to steer away from store bought dressings and found this looking for a mayonnaise based one. It is fantastic! The honey takes away the sharp tang of the mustard, but not completely so you can definitely tell it's in there. I made a double recipe to have with salad and my kids used it as a dip for homemade chicken fingers. This is a dressing I will make a lot!

Black Bean Vegetable Soup

This is a fantastic soup but I am rating it a 4* because I made a couple changes to feed a crowd. I added chopped celery, a tin of green chilies, organic chicken stock instead of vegetable stock, and increased the tomatoes - a 28oz tin of diced tomatoes as well as 28oz tin of crushed tomatoes. I sauteed the vegetables until tender, then combined everything in a slow cooker. I didn't puree it at all, and the consistency was good. It was delicious and got many compliments. I will definitely make this again.

Simple Sicilian Salad Dressing

In an effort to be more health concious, I have been trying to get away from bottled dressing and this is a perfect and easy option. I gave it a 4* rating as I used Italian seasoning instead of oregano, and garlic salt to taste. My 7 year old daughter recognized it as the dip we use for foccacia bread, so I'm very happy the kids will use this, too.

Cowboy Oatmeal Cookies

I just made these today. This recipe is very similar to my mother's recipe, but I liked that it has more oats so I tried it. The only thing I did different was omit the butterscotch chips and up the oats to 3 cups. I used a small stainless steel scoop to form the cookies (approx 2 tsp measurement) and had a yield of 7 dozen. They are delicious! I put the majority of them in the freezer in a ziplock bag so I can take out a couple as I need for my kids lunches. Will make these again.

Microwave Popcorn

I made this immediately after reading reviews on it. As one reviewer suggested, I used 1/4 cup of kernels, 1 tsp oil and 1 Tbsp sugar to make Kettle corn. Popped it for 2 minutes and now I am enjoying it as I type! Great, quick snack!

Campfire S'mores Smash

Had a bunch of people over for a firepit and hotdogs tonight and decided to make these instead of doing them the traditional way - it was also very cold (about 2 degrees above freezing) and didn't want people to have to wait for S'mores. Anyway, I did it on the stove top (the butter and marshmallows), added chocolate chips with the broken graham wafers and pressed it into a 9" square lined with parchment paper. Cut it into 16 pieces and everyone LOVED it. Will definitely do this again, thank you!!

Bacon for the Family or a Crowd

This took WAY longer to cook than stated, and I used regular sliced, not thick. I turned it, and eventually separated the pieces (from the recommended layers) and eventually turned on the broiler to crisp it up. I like that it doesn't curl up, and it is very easy to do this way. I will do it again, especially for a crowd, but I will take the time into better account. Luckily, turning on the broiler at any point speeds up the process. Overall, great way to do bacon.

Macaroni and Cheese V

I omitted the onion but otherwise followed recipe as is. I have never added the breadcrumb topping before and I liked this dish a lot. My son loved it, daughter didn't (but not surprising), and hubby liked it but prefers a creamier, saucier macaroni. I will keep this in my recipe box, and maybe even make it again.

Mussels in Curry Cream Sauce

I thought these were fabulous! My husband found it a little rich, but loved it also. I served it with a mixed greens salad and sourdough bread. The bread was perfect for dipping in the flavorful sauce. I used extra curry as per other reviewers comments, and I'm glad I did. I will definitely make these babies again!

Uglies

I am rating this a 4 for 'easy to prepare' - my 6 and 11 year old kids helped - and it had good flavor. My 11 year old would prefer it with taco meat, or my recipe for Sloppy Joes. My 6 year old would like taco meat, and preferrably not touching the biscuit! It was a great dinner to have on Halloween, though. Quick, easy, and very Ugly!

Jamie's Cranberry Spinach Salad

My girlfriend (not an AR member) brought this over last night for a potluck and I told her I would rate it. It is definitely a 5! Wow, what a flavorful, delicious salad. She used a beautiful mix of greens with the spinach, and everyone raved about it. She said she had to spoon the seeds over the salad as she didn't use all of the dressing, but otherwise no changes made. I've added it to my recipe box, and will make this myself!
