Honey Ginger Carrots

Love, love, love 'em!!! Super sweet and yummy! Perfect for holiday side dishes or for picking little tikes who won't eat their veggies! Try steaming your carrots instead of boiling to keep all the nutrients intact!

I should have chopped my onions much, much finer!! Super fine! The crunch of the onions with this mixture was not good! But, if all ingredients are blended well to a puree texture the flavor is perfect!!

Apple Brownies

A not too sweet alternative to real brownies. They tasted rather on the healthy side. I guess that is a good thing. I think if I make these again I will add a brown sugar crumb mix to sprinkle on the top.

Pan-Seared Chicken Breasts with Shallots

Excellent! What more can I say? Such a simple chicken dish, yet so darn tasty! Even my picky eater loved it. Next time I make this I am going to use more shallots. They were wonderful! This is a dish I would gladly serve my guests any day! I can hardly wait to make this again!

Cherry Cheesecake

Wow, I am so confused! So many 5 stars were given to this recipe and I can honestly say after following the simple steps, and then refrigerated this for well over the instructed time, the pie/cake was runny like soup and tasted way too strong of a vanilla flavor. So disappointed, I made this for my husband’s birthday as cherry cheesecake is his favorite and I felt horrible as he grinned and did his best to smile despite his (and my children’s') obvious dislike of the pie. (For anyone wondering, I followed the directions exactly! I used the exact ingredients and followed the directions precisely. No corners were cut, no substitutions were made.) If you love New York style cheesecake, you will be disappointed with this pudding pie.

Cream Cheese Snowball Cookies

The taste of this cookie was wonderful, but the consistency was not what most think of when baking the traditional snowball cookie. I was looking to make a twist on my snowball cookie and was disappointed when these cookies did not come out of the oven in the ball shape one might expect. They were flat and undercooked. I had to bake them much longer than the recipie called for. Since these cookies taste very close to what I traditionally would call a snowball cookie (without the shape), I won’t likely make these again. If the recipe was called anything other than “snowball”, I would have given it a much higher rating.

Turkey and Quinoa Meatloaf

So good! The entire family enjoyed it. We ate it with green veggies and potatoes the evening I made it and the next day we sliced up the meatl loaf for Sandwiches. We will make this again!

Witches' Brew

This was so fun to make and drink! I didn't let the hand freeze long enough, so a couple fingers fell off into the "brew". That was okay though as it added to the grotesque ooey gooeyness of the recipe. The kids LOVED it! They drank every last drop and then played with the gooey jello hand.

Carrot Rice

This is a dish people will either love or hate. I brought it to one get together and it was well received, though no rave reviews. Then I brought it to another event and the reaction was very different. Very few people liked it. It’s not a bad recipe, it’s just in need of a “pop” of flavor as it can be a bit bland.

Grilled Cheese, Cinnamon, and Apple Sandwich

Very yummy! I used wheat bread, instead of white, and Tillamook Cheddar cheese rather than American. Totally hit the spot...with some added nutrition! I know what I am putting in my kids lunches tomorrow!

Delicious Ham and Potato Soup

Love this soup is great just as it is! It is very creamy, flavorful and filling. When I have friends in need of help or who are ill, I always make this soup to bring to them and they always love it. Love, love, love it!

Sloppy Joe Sandwiches

I had 1 lb of beef to use for this recipe so, in addition to doubling the ingredients, I also added a pinch of salt & pepper, 1/2 tsp dried onion flakes, half a can of condensed tomato soup, & ΒΌ tsp cumin. With these additions the recipe was perfect.

Restaurant-Style Taco Meat Seasoning

This was a fine substitute for the packaged seasoning you get at the store. I was in the middle of making tacos when I realized that I was out of those packages. Thank goodness for this recipe! I didn't have the corn starch or the garlic salt, but it came out fine anyway. Great substitute in a jam! I might just use this recipe from now on. The only down side is that it does take more time to measure all the ingredients than it would just to rip open a packet.

Southern Butternut Squash

Definitely a winner! I had to substitute the heavy cream with butter milk and used a bit less sugar. I also used a carnival squash, as I imagine this recipe would work well with any squash. My kids and husband loved this dish so much that I plan to make it every year and start my own family tradition of serving this sweet side dish along side our other holiday favorites. Thank you very much for sharing this recipe!
