Mexican Casserole
I was skeptical that our casual guests would like this dish but it was a very big hit. Even with the five year old. I did add an onion and because I changed the Servings to 8, when the recipe called for 4/5 or something silly like that, of Taco Seasoning I just used the entire package. I did likewise with the beans and corn. This will definitely be a recipe I will make again and again!
