Chicken Florentine Rice Casserole

Yum! This was fantastic. I used regular brown rice and didn't cook it quite enough before hand so it was a little crunchy....but still fabulous. I too was wary about the cottage cheese but it was perfect! Only change was adding a sprinkle of feta as someone suggested. Perfect!

Best Ever Chocolate Chip Cookies III

These are light, cake-like cookies. Not a traditional chocolate chip but when you have no brown sugar in the house they become a great choice! I made ours with Smart Balance and they were very light and yummy. I am surprised so many rated them as not sweet enough - more than sweet enough for me. I did use Ghirardelli chips which are larger than standard....and extra yummy! ;)

Easy Lemon Cookies

The best cake mix cookie I have tried - my son adored them. I couldn't track down my lemon extract so I used the juice of 1 lemon. It was perfect - and did not taste like fruit loops at all to any of us!

Sweet and Sour Pork III

5 stars for taste but be prepared...very messy, lots of prep, clean up work with many pots etc. Made as written except only used 1/2 cup sugar. Just the right balance of flavors. Served with egg fried rice. Yum!

African Curry

Yummy! I did make a few changes per other reviews - double curry and garlic. I used 2 chicken breasts and 1 package 21-25 count jumbo shrimp. Excellent combination!

Kentucky Biscuits

Somehow this went terribly wrong. I was so excited to make biscuits from scratch and after reading all the reviews thought this was fail-proof. Nope. They were flat and tasted like baking powder. I made it as described - even grated ice cold butter. I may try again someday....

Rempel Family Meatloaf

THANK YOU!! After almost 10 years of marriage I finally made a meatloaf my hubby loves. As an added bonus the kids loved it too. I made as directed except topped it with a glaze of ketchup, brown sugar and A1 per some of the reviews I read.

Delicious! I crumbled brown sugar on top before baking. Multiple compliments on this one... One warning: a loaf doesn't last long - it is too yummy!

Strawberry Pie II

I made this as directed and it was great! I did think it looked a little strange - kind of milky. So I covered the whole thing with whipped cream and it looked great. Most important - it was very easy and yummy! Thanks!
