About this Cook
I live in CA w/ my husband and beautiful 5 year old daughter. I work full-time and we are very active. So I usually don't have a lot of time to cook. Therefore I always look for easy and healthy things to serve. I wouldn't say I love to cook, but I do it because I'm rather particular about what we eat in our house and I like to know everything that goes into our food. The worst thing about cooking.....THE DISHES!!! UGH!
My favorite things to cook
I really like to bake! The bad part is having all the treats in the house though. So I always bake a lot then give it all away to friends, family, and neighbors.
My favorite family cooking traditions
hhhmmm I don't really have any I don't think. At least I can't recall any of them at the moment. My mom didn't cook much and until the last 5 or so years I stayed as far away from the kitchen as possible.
My cooking triumphs
Let's see....I have a lot actually. Anytime I make something edible, it's a triumph...lol J/K. I'd have to say my biggest triumphs are always hosting parties. I LOVE organizing all the dishes and making everything myself. My parties always turn out great!
My cooking tragedies
The first time I made deviled eggs I could not figure out why every time I put the eggs in the water to boil they blew apart. I had to call my friend and ask her.....low and behold, you put the eggs in the water first, THEN you boil the water!! HAHA Go figure! That was about...6 years ago and I still hear today about how "Shantel had to call me to find out how to boil eggs!"

World's Best Peanut Butter Fudge
Really easy and pretty good too! It was my first time making fudge at all and I was a little worried. But I followed this recipe exactly and it came out fine.

Vanilla Glaze
I use this as a base all the time. Sometimes I substitute lemon juice, orange juice, or lime juice as the liquid and then also add in some zest. Very easy and delicious! It can dress up just about anything.

Zucchini Bread
My husband said this was the best zucchini bread he had every had! I used the applesauce instead of the oil like one other reviewer had mentioned. I added the chocolate chips (milk chocolate) and some crushed up pecans. I also put a vanilla icing on top. It took this from a bread to a cake. So delicious!
