Sourdough Bread III

Warren, THANK YOU so much for this wonderful recipe. The loaf was quite sour and so tender. The only change I made was subbing olive oil for the margarine (as I didn't have any). Beautiful rise, great crust. Will be making often!

Baked Zucchini Chips

Sturdy Whipped Cream Frosting

I really wish that I had read the reviews based on ratings:(. If you check the ratings from lowest to highest, I know I am not the only one who had a soft liquidy frosting. All my utensils, KA bowl were chilled, too. Not sure what happened here, but there is no way the frosting that resulted would have ever piped like the frosting in the picture. About half the pictures show defined piping, the other half look super soft and like cool whip. I had to scrap the whole thing since I was looking for a stable frosting to pipe rosettes onto red velvet. Flavor was good and rich, though.

Italian Bread Using a Bread Machine

Very good bread, chewy & more dense than I expected. Not sure if I am the only person that had to add more warm water & olive oil? Will make again & try bread flour. Salt amount was just right.

Chocolate Nut Biscotti

These are excellent if you like your biscotti on the softer side. I know purists disagree, but I enjoy softer biscotti. Toasted the hazelnuts, removed skins and coarsely chopped. 1st batch I added toffee bits and 2nd batch subbed in tart dried cherries. Great recipe, easy to change up. Thank you for a keeper!!

Creamy Chocolate Frosting

Wow! Thank you for such a fabulous recipe. Sooo decadent with a true milk chocolate flavor. I actually used 8Tbs. butter as it was easier to throw the whole softened stick in mixer. Whirred it all in the Kitchen Aid. Creamy perfection. Yum. Generously covered a 9x13" cake. My new favorite chocolate frosting recipe-my husband & kids were floored by this & I bake a lot.

AMAZING! Followed exactly, only change was halving the recipe. It made about 50 medium-large kolachky. Filled with homemade apricot jam and baked on parchment. Flaky, rich, sweet, yum. 12/16/2011: Made these again today and they are just soooo good. Not a difficult recipe to follow at all. Do not overmix-it will keep the patry tender. If you haven't worked with kolachky dough before, a half batch is easier to manage. Thank you so much for this recipe.

Corn Casserole III

Such a great dish-always a crowd pleaser. Make every year for Thanksgiving. I think that I cooked it for 1 hour, 5 minutes. At 40 minutes, the center was still like mush.

Zucchini Patties

Very yummy, very easy. My kids weren't crazy about them but my husband & I thought they were fantastic. After I mixed everything, the batter seemed really loose so I added a bit of extra flour (few Tbs.) It still didn't hold but when I dropped big spoonfuls into my hot cast iron skillet, they stayed together. I just patted flat with the back of spoon & flipped when golden brown. I only used 2 Tbs. oil for the whole bunch. Delicious! And they really do look like the crispy brown cakes in photo.

Homemade Lofthouse Cookies aka Jiffy® Sugar Cookie

Lofthouse perfection! I had to change a little bit b/c I didn't have exact ingredients on hand. Used Bisquick Heart Healthy mix and subbed softened butter for Crisco. Blog suggestion to pipe cookie batter onto parchment was wonderful. They were all uniform in shape and cooked evenly. Frosted with Jiffy white frosting mix. Thank you for a keeper recipe-will save us money, too!

Sara's Pumpkin Pie

Great recipe for basic pumpkin pie. I did need to bake for extra 8 minutes. For those with runny centers, let the pie cool completely-I can understand this as mine took several hours to set up. Very soft & creamy texture, great spice. Thanks!!

Creamy, decadent, amazing ice cream. Will not add chocolate jimmies next time as they changed the flavor & color of the ice cream. Tasted even better (if that is possible) after it had ripened in the fridge. Thank you for excellent recipe!

Lime Cilantro Rice

Delicious! I used the Everyday Food's version, using EVOO instead of butter. This has HUGE cilantro & lime flavor. Made as a side for baked tilapia. Would be excellent tucked into fish tacos, too.
