Summer Vegetable Ratatouille

This was soooo yummy. I did have to make a few modifications for my picky husband, but other than omitting the peppers and diced tomatoes for a can of tomato sauce it was fantastic. Definately a keeper.

High Temperature Eye-of-Round Roast

Since I found this recipe it is the ONLY one I use for Eye of Round roast. Honestly, you cant get any easier or more perfect of a recipe. Last night I tried it with a little bit of minced garlice, salt, pepper and Olive oil and it was FANTASTIC! Today we had the leftovers. Even better the next day. :)

Kentucky Butter Cake

I make cakes daily for a business and found this recipe. I made my test cake and poured it into two 8" round pans and baked them off. Once cooled i frosted them both after doing the butter sauce between the layers with Buttercream frosting. Everyone who tasted this thought it was amazing. Definately a keeper! This has made it into my Cake selection I offer to my customers because of this. Thank you Suzanne! :)

Marshmallow Fondant

I have been doing wedding cakes for over 12 years and have stayed away from fondant due to the horrible flavor. Recently I had a friend request fondant and i told her that I would only use it if I could find one that tastes good. THIS IS IT!!! Sooooo easy, so yummy and it keeps amazingly in the fridge for use again later. Honestly, this tastes like a cross between a circus peanut and candy corn! YUMMO! Dont be afraid to try this. Oh and a regular stand up mixer wont work. You need to use a Kitchenaid with the paddle or whisk attachment otherwise it will bind up. I learned the hard way. lol

Easy Garlic Broiled Chicken

This recipe was absolutely phenomenal! My children literally argued over who would eat the last piece of chicken the next day. Since I am Mom, I outranked them and I was the lucky one!!! I however after reading other reviews opted not to broil the chicken, but instead baked it on a cookie sheet @ 350 till the meat thermometer read 165. FABULOUS!!

Shepherd's Pie

I made this for my family and my lilttle girl just couldnt get enough of it. I normally make a traditional Shepherd's pie with lamb, but this was a good way to use the old standby of ground beef. I didnt have any mushrooms on hand, so to bump up the fiber, I included a can of blackeye peas. Sounds crazy, but it went very well with the beef and veggies. I will definately be making this dish again. Thanks!

Kyle's Favorite Beef Stew

You know, I'm not sure who this Kyle person is.....BUT HIS BEEF STEW ROCKS! I decided I would give this a shot in my Cast Iron Dutch oven to be baked low and slow. The meat was tender, it had so much flavor and I didnt even have any wine on hand, so i utilized Beef stock to replace it. That was the only thing I did differently and it was soooo good. My husband even said it was the best one I have ever made. Thanks Kyle!

Hominy Beef Bake

This was very yummy. I had all ingredients on hand. The only change I made was since I was lacking the plain tortilla chips I used crushed up barbeque flavored corn chips and a handful of taco seasoned shredded cheese. The kids and hubby devoured it.

Exquisite Pizza Sauce

This soup was awesome. I had most of the ingredients on hand and was able to substitute Ground Turkey in place of the beef. Still excellent. My 7 year old daughter ate this up and even went back for 2nds. Definately a keeper. Topped it off with some fresh cilantro.

Spiced Pot Roast

This is one amazing Roast. AS it was cooking in the dutch oven, the aroma that was coming from my kitchen was soooo yummy, but it did not even compare the flavor that this roast gave. I dont think I can ever go back to my same old roast again. Thanks!
