Chocolate Cheesecake II

I just made this for a coworker's birthday and it got rave reviews from everyone (even our manager who claims to not like dessert went back for more!). I followed the recipe exactly and it turned out perfectly. It didn't stick to the pan. It didn't crack. The ganache was delicious and not hard as other people have stated. I highly recommend this to anyone who needs to bake something easy and impressive.

Mom's Zucchini Bread

Delicious! My family ate it up. I made a couple of substitutions, but only because that's what I had on hand. I think it would be just as delicious, as is. I used 1 cup brown sugar and 1 1/4 cup white sugar. I also used 1/2 cup applesauce and 1/2 cup oil. I also left out the walnuts because I didn't have any. Definitely give this recipe a try.

Peppermint Patty Surprise

These cookies taste great and are a holiday favorite in my family. The only problem is that they're a little messy to make. The dough is always too sticky. I guess adding more flour would help, but I've never tried it. No matter what, temporarily messy hands are a small price to pay for a delicious cookie!

Ice Cream Kolacky

So yummy and easy. I wasn't sure about the dough before cooking, but the cookie turned out great. It is very buttery and flaky. I used homemade boysenberry jam and Trader Joe's pumpkin butter to fill the thumbprints.

Slow-Cooker Chicken Tortilla Soup

So good and easy! I followed the suggestions and used frozen chicken breasts and then shredded the chicken during the last hour or so of cook time and added a can of black beans. Delicious! Then garnished it with avocado, sour cream, shredded cheese, and of course, tortilla strips :)

Blueberry Coffee Cake I

This was good, but I made the following modifications: (1) I halved the streusel topping (and there was still some left over), (2) I used 3/4 cup milk because I thought the batter looked too dry - depends on how you like your coffee cake I suppose, (3) I used 1 1/2 cups blueberries and folded them into the batter before spreading into baking dish, (4) I spread half the batter in the dish and then sprinkled some streusel topping in the middle, then put the remaining batter on top and covered in streusel, (5) I used a 9x13 glass baking dish, baked it at 325 for about 25 mins (until golden brown)

It smelled fantastic, but the taste was just okay. I may try again and play with the ingredient amounts - less cinnamon and sugar, and more coconut milk next time. It has potential.
