Chicken Pot Pie IX
This is the first time I have made a chicken pot pie and it was wonderful. Both my toddler and husband loved it. I did not have celery, but did add pre-boiled potatoes, and frozen mixed veggies. I have a gas oven and baked it for 30 minutes as another person suggested. I added an additional 1/4 C chicken broth and milk respectfully. Thank you so much for this recipe, i will be making it often. Oh, and I had enough ingredients for 2 smaller pies.

Grilled Eggplant, Tomato and Goat Cheese
I'm sure I did something wrong when I was making this. The eggplant was too hard and the vinegar was too strong. If I try it again, I would use thinner slices of goat cheese and keep them on the grill longer. The presentation was great though.

Friendship Soup Mix in a Jar
I tried this recipe before giving it as Christmas gifts and both my husband and I agreed that it was yummy! It does make a lot so plan on freezing some or I just took it for lunch all week with some Italian bread. I followed other people's recommendations and used less rice, added chili powder, used tomato sauce instead of paste and included elbow macaroni. My mason jars were too big and I had to fill the extra room with tissue paper but they still turned out really cute! Thanks for this great recipe, I can't wait to give them out.
