Award Winning Soft Chocolate Chip Cookies

My new favorite recipe for chocolate chip cookies. I made half the recipe and 1 & 1/2" balls of dough made about 4 dozen nice 3" cookies. Baked for 11 minutes on my baking stone, which was pre-heated. The cookies came out of the oven lightly browned and puffy. When cooled, on a rack, they were perfectly shaped and done. I only use unsalted butter and will add a little salt with the flour mixture next time. When fresh out of the oven, until completely cooled, I thought they were going to be a little "greasy", however that disappeared after awhile. If you've had a problem with these cookies being hard, I'd suggest checking your oven temperature. Thanks, so much, for sharing the recipe!

Grandma Johnson's Scones

Delicious! Have made the recipe several times and decided next time I'll make "mini scones". That way I won't feel as guilty eating two. The addition of a teaspoon of orange zest and Craisins in the batter and orange zest and fresh orange juice to a confectioner's sugar glaze, drizzled over the scones right from the oven, is my favorite. I'll be trying others suggestions, too. Great recipe!

Six Can Chicken Tortilla Soup

Great recipe to use ingredients you have on hand. I had some of the ingredients however I used leftover chicken breast, prepared black beans I had on hand and plain canned tomatoes. I added about a 1/2 cup of salsa and a teaspoon of chili powder to add some "kick" Seemed as though I had too much broth, so cooked some rice and added it. As with most soups, the flavor was much better the second day. I'll be making this again, with the changes I used.

Best Carrot Cake Ever

After reading reviews I decided to make certain the carrot mixture & pineapple were very well drained. I served the cake about 4 hours after making and thought it was good, but a little dry, so decided next time I wouldn't drain the carrot mixture. I used a cream cheese frosting, refrigerated and the following day - viola, it was nice and moist and flavorful, as most cakes with spices seem to be after a day. Decided next time I'll make it a day before serving. I had to give half the cake to neighbors or I would have eaten it all!

Excellent! Made exactly as written. Next time I may add 1/2 cup chopped walnuts in date mixture after cooking it. Loved the spice in the mix. Thanks for sharing this great recipe.

Pizzelles II

Great recipe and nice & crisp! I, too, used melted butter and feel the anise extract was just the right amount for our taste. As suggested by another reviewer, I trimmed the edges with kitchen scissors and they are "picture perfect". After trying other recipes over the past 40 years this will become my standard.

Black Bean Vegetable Soup

My new favorite soup! I added an extra teaspoon chili powder, used an entire 28 oz. can of tomatoes, an entire 15 oz can of corn and 1/2 cup of regular barley, that I had not soaked. With the addition of the barley I cook it about 1 -1 1/2 hrs. The first time I made it the only tomatoes I had were Rotel and it was way spicy, but good. I top each bowl with about a teaspoon of sour cream and stir. That addition makes it taste wonderful!

Breakfast Pies

Wanted to try this with what I had on hand. I pulled Pillsbury Grand Biscuits apart to make half the size, rolled them out & used my larger 6 muffin cup pan. I used 5 eggs & some chopped ham with the other listed ingredients. Baked until the egg was set. Very good and they are just fine warmed in the microwave if you have leftovers. I think they would be good frozen, thawed and re-warmed, also. Great "kid friendly" recipe for a healthy breakfast.

Apple Pie Coffee Cake

Had everything on hand to make this cake & tried it for a dining group. It was a big hit! Leftover cake was even more moist the following day. The apple pie filling I used was a "special edition" Caramel Apple Pie I had found at my favorite discount grocery store. The slices were pretty big so I chopped those for the filling. Immediately after glazing the cake I sprinkled chopped pecans on and thought that was a nice addition. Great recipe for a fall dinner dessert! Thanks, so much, for sharing it.

Five Ingredient Ice Cream

Wow! What a treat and so easy. I added 2 cups crushed frozen strawberries, otherwise made as written. I'll be making this many times this summer since I stocked up on Eagle Brand Condensed Milk that was "close dated" 4/$1.00 today. Think I'll make it for the block party! Will plan to try adding other fruits as they come in season and other ingredients, too. thanks, so much for sharing this great recipe.

No-Fuss Meat Loaf

Surprise! I can actually make a great meat loaf! After many attempts at making a good meat loaf for over 40 years, finally success. I added some chopped onion & green pepper as others suggested and received rave reviews. Thank you so much for sharing this great recipe. My only objection was the price of the Stove Top Stuffing, which I don't normally have on hand.

Easy Chicken Enchiladas

Quick, easy and very good! Only change I made was to use 8 1/2" whole wheat flour tortillas and the filling was ample and they fit perfectly in the 9x13" pan.

Best Chocolate Chip Cookies

Great cookies! This will be my "standby recipe". I didn't have semi-sweet chocolate chips, so used milk chocolate, may have been sweeter, but sure satisfied me! Only problem I encountered was in printing the recipe it noted "Yields 24 servings" so I made very large cookies after reading, "Drop by large spoonfuls..." In checking the original recipe I note it states "4 dozen", however no where in the printed recipe does it state how many it makes. I baked them a little longer, but they still stayed soft in the middle. Thanks for the great recipe!
