Grandma Johnson's Scones
Delicious! Have made the recipe several times and decided next time I'll make "mini scones". That way I won't feel as guilty eating two. The addition of a teaspoon of orange zest and Craisins in the batter and orange zest and fresh orange juice to a confectioner's sugar glaze, drizzled over the scones right from the oven, is my favorite. I'll be trying others suggestions, too. Great recipe!

Six Can Chicken Tortilla Soup
Great recipe to use ingredients you have on hand. I had some of the ingredients however I used leftover chicken breast, prepared black beans I had on hand and plain canned tomatoes. I added about a 1/2 cup of salsa and a teaspoon of chili powder to add some "kick" Seemed as though I had too much broth, so cooked some rice and added it. As with most soups, the flavor was much better the second day. I'll be making this again, with the changes I used.

Best Carrot Cake Ever
After reading reviews I decided to make certain the carrot mixture & pineapple were very well drained. I served the cake about 4 hours after making and thought it was good, but a little dry, so decided next time I wouldn't drain the carrot mixture. I used a cream cheese frosting, refrigerated and the following day - viola, it was nice and moist and flavorful, as most cakes with spices seem to be after a day. Decided next time I'll make it a day before serving. I had to give half the cake to neighbors or I would have eaten it all!
