Pistachio Cake III

pretty darn good and I got a lot of compliments for its green color on St Patty's day. Very simple and moist. I followed the recipe to the T and it came out perfect. I didn't have any problems with it caving in. I think the key to good baking is that once you put it in the oven...just leave it alone! Don't mess with it or keep on opening the oven door. Once it cooled I made a simple glaze with powdered sugar and water. Very good:)

Four Cheese Margherita Pizza

Coconut Macaroons III

I'm not a big fan of coconut but for some reason I had a craving for these today. They are wonderful!!! I followed the recipe to a T. I did cook them a bit longer to get that golden color. About 18 minutes. They are very soft when you take them out of the oven so don't worry if you think their not cooked enough...they harden a bit once the cool down.

Honey Butter

yum! This was always on the dinner table when I was younger but with age I had forgotten all about it. I thought of it the other day...had it tonight with dinner...and it was so delicious that I didn't even want the rest of my food. Sit me down with a warm loaf of French bread and this butter and I'm a happy woman.

Too Much Chocolate Cake

This is wonderful...and fool proof! I wasn't paying attention and added regular pudding instead of the instant and it didn't seem to make a difference. I did take another reviewers advice and added the tiny chocolate morsels so they wouldn't sink to the bottom while baking. It was delicious.

World's Best Lasagna

Awesome! I used more ricotta than called for... a 2lb container with an added egg and parsley. Also it was a bit too salty so maybe next time I will cut the amount of salt in half.

Tom Ka Gai (Coconut Chicken Soup)

I made this tonight and it was great! Like some of the reviews stated I used chicken broth instead of water and it turned out well. I added 1 tsp of lemongrass paste. No tumeric and no pepper. Toward the end I also added sliced white onion and some mushrooms with the cilantro...and about 4 TBSP of sugar. It sounds like a lot be it works. And finally.....shrimp instead of chicken! Add it during the last two minutes and it turns out perfect.

Lebanese Chicken and Potatoes

This was so delicious and easy! I followed the recipe to the T and it came our perfect. I was worried that the lemon juice/sauce would be greasy from the chicken but it had great flavor. My only suggestion is to turn the broiler on after baking to brown the potatoes and chicken. About 5 min to render out the last bit of fat on the chicken and to crisp it up. Thank you for this recipe!

Eggplant Parmesan II

Great dish because it's healthier than the classic version and because it so hearty. This would be a great dish to try on someone who demands meat at every meal. I didn't parboil of salt my eggplant before baking. I did bake it longer...about 14 minutes but everything else stayed the same

Linguine with Clam Sauce

Loved it! I did use olive oil as others suggested, as well a a big handful of grated Parmesan at the end to tighten it all up. Also, a fair amount of salt to make the other flavors pop. So easy, delicious and fairly inexpensive. I won't be ordering this out at restaurants anymore! Thank you for this great recipe:)

The Best Potato Salad

This recipe reminds me of my mothers which I really miss. I loved this recipe... especially the banana peppers at the end. It gives it added texture and zing. I do use light ranch dressing... just to cut back on the fat a bit. You can't tell the difference.

Exquisite Pizza Sauce

I follow this recipe to the T and I think it's great. I remember thinking when I made it for the first time that it wouldnt turn out. The taste is strange in its raw form, but onces it's slathered onto pizza dough and baked into the over its perfect. Sweet, salty, and spicy. I too make a double batch and freeze what I dont use for next time. Thank you for sharing this recipe!

Lentil Soup with Lemon

Love this. When I was younger I was forced to eat lentils one night and vowed I would never eat them again. I found this recipe and made it for my husband, and now I make it for myself. The flavor is wonderful, its healthy, and easy to make. I wasnt able to find red lentils so I used plain. I cooked it ten minutes longer than recommended ( the first time I made it some of the lentils were still a bit firm) and added a bit more lemon juice to taste. Its wonderful.

Blooming Onion and Dipping Sauce

Yum. I agree with some of the others about the coating. It is delicious but doesn't stick...so next time ill try dredging them twice. Perfect otherwise. Accidentally bought grated horseradish and not creamy horseradish...couldn't tell the difference in taste. Just make sure to mix the sauce ahead of time and let rest in the fridge so the flavors can mingle.

Patty's Mom's Black Bean Soup

Wonderful. I only used half the amount of Sherry and ended it in a blender to make it creamy. Very good. Yes its time consuming to make but its worth it. I even ate some for breakfast the next morning. I fried a tortilla, poured some of the soup on top and then placed two fried eggs on top of that with some cheese, tomatos and red onion. Awesome.

Slow Cooker Split Pea Sausage Soup

great recipe for the crockpot! Other than using the sausage I didn't change a thing. Rather than the sausage I threw in two ham hocks. I let them cook in the soup all day then removed them, shredded the meat and added it back to the soup. The soup was a little thick at the end so I just added some additional stock to thin it to the consistency that I wanted. Very good... thank you for this recipe!
