Flatlander Chili

Island-Style Fried Rice

This is one of my favorite recipes to cook anytime I have left over rice. The key to great fried rice is to use two or three day old rice! Whenever I use fresh rice for fried rice dishes it always seems to turn out so mushy. I think using old rice is best because it has dried out a bit while sitting in the fridge so when you cook it the rice remains in individual grains rather than lumping together. Also, I have never had SPAM before this dish and loved it! The saltiness from the SPAM and the sweetness from the pineapple really mesh well. Thank you for this recipe!

The Best Potato Salad

This recipe reminds me of my mothers which I really miss. I loved this recipe... especially the banana peppers at the end. It gives it added texture and zing. I do use light ranch dressing... just to cut back on the fat a bit. You can't tell the difference.

Chicken Noodle Soup

Slow Cooker Split Pea Sausage Soup

great recipe for the crockpot! Other than using the sausage I didn't change a thing. Rather than the sausage I threw in two ham hocks. I let them cook in the soup all day then removed them, shredded the meat and added it back to the soup. The soup was a little thick at the end so I just added some additional stock to thin it to the consistency that I wanted. Very good... thank you for this recipe!

Linguine with Clam Sauce

Loved it! I did use olive oil as others suggested, as well a a big handful of grated Parmesan at the end to tighten it all up. Also, a fair amount of salt to make the other flavors pop. So easy, delicious and fairly inexpensive. I won't be ordering this out at restaurants anymore! Thank you for this great recipe:)

Eggplant Parmesan II

Great dish because it's healthier than the classic version and because it so hearty. This would be a great dish to try on someone who demands meat at every meal. I didn't parboil of salt my eggplant before baking. I did bake it longer...about 14 minutes but everything else stayed the same

Lentil Soup with Lemon

Love this. When I was younger I was forced to eat lentils one night and vowed I would never eat them again. I found this recipe and made it for my husband, and now I make it for myself. The flavor is wonderful, its healthy, and easy to make. I wasnt able to find red lentils so I used plain. I cooked it ten minutes longer than recommended ( the first time I made it some of the lentils were still a bit firm) and added a bit more lemon juice to taste. Its wonderful.

Lebanese Chicken and Potatoes

This was so delicious and easy! I followed the recipe to the T and it came our perfect. I was worried that the lemon juice/sauce would be greasy from the chicken but it had great flavor. My only suggestion is to turn the broiler on after baking to brown the potatoes and chicken. About 5 min to render out the last bit of fat on the chicken and to crisp it up. Thank you for this recipe!

Thai Cucumber Salad

Taste Delicious! Very cool and refreshing although I think next time I will cut back on the sugar and add some read pepper flakes to the dressing. Its hits all the taste buds and the peanut crunch makes it special.

World's Best Lasagna

Awesome! I used more ricotta than called for... a 2lb container with an added egg and parsley. Also it was a bit too salty so maybe next time I will cut the amount of salt in half.

Too Much Chocolate Cake

This is wonderful...and fool proof! I wasn't paying attention and added regular pudding instead of the instant and it didn't seem to make a difference. I did take another reviewers advice and added the tiny chocolate morsels so they wouldn't sink to the bottom while baking. It was delicious.

Asian Lettuce Wraps

Fair warning, these don't taste like pf changs. So if your going to make this thinking that it will be like pf changs they won't. BUT.. if you do want a good Asian wrap recipe this is a the one. I used ground chicken. I also doubled the sauce. Next time I will use less sodium soy because it was on the verge of being to salty. Also I will half the ginger because it was pretty strong. Pretty tasty!

Bill's Blue Cheese Dressing

I love this and make it all the time. It is rich, creamy and sharp because of the blue cheese. When making dont skimp on a purchasing a good blue cheese because it makes all the difference in the world. Also, I have read some complaints about this recipe from other reviewers. Some state that it has too much mayo. It does have a "mayo" taste when you first mix it all together but your not suppose to eat it right away! Let is sit for at lease six hours, or make it the night before like I do. Also, yes, worchestire is in the dressing, I hate it by itself, but cant taste it when it is combined with everything. So people quite your whinning! Follow the directions, and let it so over night so it can work its magic. My favorite way to eat it....with grilled jerk chicken wings:)

Green Slime Smoothie

Really great basic smoothie recipe! I omitted the water and added 1/4 cup of plain greek yogurt and then about 1/2 cup of non-fat milk. You can add more depending on the consistency you want. I add the yogurt and milk to make it more filling and to hold me over til lunch. I love this recipe because Im always so hungry in the morning and I usually gravitate towards heavy foods like pancakes or eggs and bacon. If you drink this you immediately feel better about yourself,its filling so your not hungry two hours later, and it makes you more cautious about the food you continue to eat throughout the day. And btw, the honey kills the spinach taste so dont be nervous or put off!

Honey Butter

yum! This was always on the dinner table when I was younger but with age I had forgotten all about it. I thought of it the other day...had it tonight with dinner...and it was so delicious that I didn't even want the rest of my food. Sit me down with a warm loaf of French bread and this butter and I'm a happy woman.

Juiciest Hamburgers Ever

I made this tonight and it was pretty good! I didn't use as much as much breadcrumb as the recipe called for...only 1/2 a cup. I was worried about some of the complaints of the "meatloaf" texture. Everything else stayed the same tho. Maybe an extra pinch of salt.

Coconut Macaroons III

I'm not a big fan of coconut but for some reason I had a craving for these today. They are wonderful!!! I followed the recipe to a T. I did cook them a bit longer to get that golden color. About 18 minutes. They are very soft when you take them out of the oven so don't worry if you think their not cooked enough...they harden a bit once the cool down.

Blooming Onion and Dipping Sauce

Yum. I agree with some of the others about the coating. It is delicious but doesn't stick...so next time ill try dredging them twice. Perfect otherwise. Accidentally bought grated horseradish and not creamy horseradish...couldn't tell the difference in taste. Just make sure to mix the sauce ahead of time and let rest in the fridge so the flavors can mingle.
