We love this recipe, works great with rice or as fajitas, or plain. Easy to adjust the spiciness depending on who is eating. Very good recipe.

Bodacious Broccoli Salad

Peanut Blossoms

These are wonderful. If you want to freeze them, don't completely bake the cookies and DON'T put the hershey kisses in them. Freeze. When you want to serve them, thaw them out...bake for a few minutes (until done) and add the hershey kisses. Yummy!

Special Buttercream Frosting

Made this with half butter and half shortening, turned out fabulous! Not at all greasy and nice and fluffy. Perfect. I just made this again using all butter and it turned out even better, if that is possible. You just can't go wrong with this recipe!

Shrimp Quinoa

This was wonderful! It was my first time using quinoa and I couldn't have been happier with the results. I didn't have asparagus so I used green beans and left out the raisins since hubby doesn't like them. Wonderful recipe and very easy.

Sugar Free Eggnog

This was just ok. Definitely did not taste like eggnog, more like thin vanilla pudding with spices. Letting it sit in the fridge for 30 minutes is a must if you want your drink to be thicker. It's not a bad taste, it's just not eggnog.

Spanish-Style Quinoa

Wonderful recipe...so simple and easy to adjust to your own tastes. I added ground beef and mushrooms. This would be great (as others have indicated) as a filling for stuffed peppers or in burritos. Thank you for a great recipe.

The Ultimate Brownie

Wow! These were the darkest, richest, chewiest homemade brownies I've ever made...yummy! 5 star rating for the following: I did half the recipe (using only 2 large eggs) and made them in an 8"x8" pan. I followed Belderane's suggestion and melted the butter then added the cocoa to that. Removed from heat added the sugar, mixed well...added the eggs and so on. Baked for 30 minutes which was just a tad too long, so maybe 28 minutes would be good. Wonderful recipe, thanks Carol!

Donut Muffins

These were good, not out-of-this-world as I was hoping but definitely good. Made them as written and they were gone in minutes after removing from the oven. Would be perfect for a brunch or breakfast for guests but would definitely need to make more.

Tater Tot Casserole

I seem to be in the minority on this one but this was just ok. I wanted to love it but it was lacking something, not sure what. Made it for friends and their 4 boys and no one was real impressed. It's a "stick to your ribs" kind of meal that would be best on a cool fall/winter day and is very simple to prepare, but I probably won't be making again.

Seven Layer Taco Dip

I make this recipe often with a few alterations. As a "secret ingredient" I add cubed Velveeta (~1/2 lb) to the refried beans (and I've had people tell me they love this dip even though they usually don't like refried beans), heat in small pan until melted and just add 1/2 of the envelope of taco seasoning mix and a little of the salsa. When the velveeta is melted I spread the mixture in a large pie plate and refrigerate it. Then I mix the room temperature cream cheese with a hand mixer until smooth, then add the sour cream and the other half of the taco seasoning mix...this is how to prevent the lumps. I never add green pepper or olives and sometimes skip the lettuce too. This dip always disappears!

Double, triple or quadruple this recipe or you will certainly run out! I left the soda out and offered it as an option for people to add to their glasses, most did not. Wonderful recipe!

Drunken Peachanero Salsa

I didn't exactly make this recipe but gave it 5 stars because I love peach salsa! lol! I added tomatoes, red and green bell peppers and used peach schnapps instead of the tequila. Also, I don't like "crunchy" fruits or veggies in my salsa so I sauteed my onions and peppers and left out the firm peach, just used canned peaches (I also use some of the syrup from the peaches to sweeten the salsa). Good stuff! You can use any "leftover" salsa to cook up some chicken and rice with for a fabulous meal.

Apple Streusel Muffins

I thought this recipe was awesome, and my hubby and coworkers agreed! I added a bit more cinnamon in the cake and the topping, and used 1/8 cup white sugar and 1/8 cup brown sugar for the topping. I made this as an 8"x8" cake (plus 2 muffins for hubby) and topped with a maple glaze, as suggested by joy. Can't go wrong...rich, dense, moist and oh so yummy!

Tuna Noodle Supreme

This was so good! It was nice to find a recipe that didn't call for cream-of-something soup (nice to have the option). I used miracle whip instead of mayo (personal preference) and substituted frozen peas for broccoli (or else hubby wouldn't have touched it) but other than that I made it as written. We both loved it! A yummy, creamy comfort food. Will definitely be making again, and soon. Thank you, Ellen, for this excellent recipe!

BBQ Glazed Homemade Meatballs

Simple and simply delicious! I didn't have evaporated milk but regular milk worked just fine. I cooked my meatballs in a frying pan until mostly done, then put all in a crock pot with the sauce on low for about 5 hours. Took to a party and didn't bring home any leftovers.
