Easy Sausage Strata

Served it for Christmas brunch -- turned out great. Only change I made was to use frozen tater tots instead of bread and sauteed mushrooms with the sausage. Kids said they want this for next Christmas, too!

Chicken Salad with Peaches and Walnuts

Excellent. Used with poppy seed dressing and rotisserie chicken with the skin removed. Everyone loved it -- so easy to put together -- this one is going in my salad repetoire!

Poppy Seed Salad Dressing

loved it! easy to make (subbed distilled vinegar for the cider, reduced sugar to 1/2 cup, used dried minced onion, and canola oil) -- I'll never buy Poppy Seed dressing again in the store.

Parchment Salmon Packages with Asparagus

Small Changes Made it Wonderful: used sliced zucchini and scallions instead of the asparagus. Added a bit of brown sugar to the sauce. Served with zucchini and angel hair pasta. The extra sauce inside the salmon was a perfect accompaniment to the pasta. DH loved it -- said it tasted like something we'd order in a nice restaurant. Thanks for the recipe!

Chicken Fajita Melts

Great Recipe to Tailor to Your Family - toasted the bread under the broiler, then rubbed a garlic clove over it. Sauteed the chicken using my own taco seasoning mix (chili powder, cumin, paprika, garlic powder). On the toasted bread I placed chopped lettuce, the chicken, and chopped onion. Added two tablespoons of Tostido's salsa con verde. Added chopped tomato and topped w/shredded cheddar cheese. Placed under the broiler to finish them off -- yummy!

Baked Garlic Parmesan Chicken

Excellent Recipe. I used leg/thigh quarters with the skin on. Baked at 350 for about an hour, and it was moist and delicious. This one's a keeper!

Oyster Stew

Very good. Used 2 cups half n half, 2 cups whole milk. Also used a red onion instead of shallots. Although the container of oysters was only 8 oz, it was still very tasty. This one's a keeper!

Chocolate and Almond Biscotti

Dough was difficult to work with -- too dry, which made for a very rustic-looking cookie. Taste was very good however, and I drizzled white chocolate on the biscotti.

Chicken Cordon Bleu I

Had unexpected company for dinner the night I made these, and they were a hit! Dipped the rolled chicken breast in honey mustard, placed in pan, and then added the bread crumbs. Baked at 400 for 20 minutes, then added extra cheese and cooked for another 5 minutes. The honey mustard made a nice little bit of sauce in the pan, which I poured over the chicken after plating it. Wonderful recipe!

Ham 'n' Cheese Mashed Potatoes

Substituted garlic powder for garlic salt, did not have whipping cream and used 1/4 cup skim mile and 1/4 cream cheese. Also sprinkled seasoned breadcrumbs on top for extra crunch and texture. It was very good and will be made again!
