Goat Cheese Stuffed Lamb Burgers

These were great! Both my hubby and brother-in-law loved them...especially the goat cheese middle. I did cut back on the salt and used herb goat cheese. I served on buns and topped them with tomato, red onion, lettuce and tzatziki...yum! Will definitely make these again and maybe eat in pitas.

Six Can Chicken Tortilla Soup

I took other reviewers suggestions and used rotisserie chicken instead of canned, black beans instead of kidney (drained - my personal preference) and added one teaspoon each of cumin and chili powder. My husband made some fresh pico from our garden and we topped it off with that. Thanks for sharing!

Tomato Basil Soup

I used a pinch of truffle salt, a pinch of garlic salt and a pinch of regular salt. Will add more basil next time and let it cook for 5 minutes. Overall super yummy and light and great with grilled cheese!

Goulash

This is such a comforting, yummy dish. I made a couple of changes per other review - used Worcestershire sauce instead of soy and added diced bell peppers. Used hot sauce and cheese to top it off. Thanks for sharing!

Stuffed Jalapeno Firecrackers

I took another reviewers suggestion and cooked at 350 for 20-ish minutes then broiled them off. I love the cajun seasoning addition...these were fantastic and cooked to perfection! Thanks!

Eggplant Parmesan

This was great and will definitely make it again! Fortunately I had fresh eggplant, tomatoes and basil from the garden so it made this dish even better. I added salt and pepper and broiled it off for the last 5 minutes. Thanks for sharing!

Roasted Vegetable Orzo

Thanks to all for the great reviews and modification feedback! I too have made some changes since I first posted this recipe. What I like most about it is that it is extremely versatile...use whatever vegetables you like or what's in season, and pick your pasta and protein. I've made it vegetarian, with chicken and with shrimp. When I cook the pasta I either use a couple of bouillon cubes or stock (whatever I have on hand). And I agree that one package of orzo is WAY too much...you should use more like 1/2 a package for 4 servings. When roasting the vegetables I've started subbing the sugar for a T of balsamic vinegar. And last but not least...MORE CHEESE!

Easy Granola Bars

These are fantastic and so easy. Was in the mood for sweets that day and substituted dark chocolate chips, peanut butter chips, raisins and walnuts and still came out great. Will keep playing with combinations. Thanks for sharing!

Crab Crusted Grouper

I happened to run across this recipe and have nearly every ingredient on hand so after reading all the rave reviews was excited to give it a try and I am glad I did! I did add garlic and Parmesan cheese to the mixture instead of the mozzarella and seasoned both the mixture and the grouper fillets with salt and pepper. I also used fresh lump crabmeat instead of canned. This was so good and my husband loved it! It was definitely a good introduction to grouper as he loves crab and crabcakes and this is basically a crabcake on top of a grouper fillet...yum! Definitely make again...thanks!

Vietnamese Fresh Spring Rolls

My husband and I loved these spring rolls...they tasted just like the one's at our favorite Vietnamese restaurant! Unfortunately I didn't have mint or Thai basil. And instead of the sauce I put together a peanut sauce/Siracha mix which was excellent! Thanks for sharing!

Chicken Souvlaki Gyro Style

This hit the spot! I love Greek food, but don't always want to have to go out to get it. For the marinade I used the balsamic vinegar instead of the vinaigrette because that's what I had on hand, added minced garlic and I loved it! I also used Greek yogurt over the plain. I made a quick lemon orzo soup to go with it and it was a perfect, quick meal. Thanks for sharing!

Chicken Tortellini Soup With Zucchini and Tomatoes

This was great! I was in a hurry so used low sodium chicken broth. I also added onion, garlic, squash and celery and left the chicken out...the tortellini was filling enough! Added parmesan to the bowl...yummy! Thanks for sharing!

Rich and Creamy Tomato Basil Soup

This is a very quick recipe for such a savory soup. I did make the lower cal/fat version by using light whipping cream and low sodium tomato juice...I couldn't even tell the difference. Also, I like my soup a little more chunky so I only pureed 1/2 of the soup. And fresh basil is a must!

Double Tomato Bruschetta

This is some of the best bruschetta I have ever made!! The combination of the roma tomatoes, sun-dried tomatoes and garlic is perfect. It's quick and easy. Fresh basil is key...don't think it will taste the same with dried. I'd add some parmesan cheese in with the mozzerella for an extra kick.

Romantic Chicken with Artichokes and Mushrooms

This is fabulous! But I did make a few adjustments. 1. Cut back on the reserved artichoke liquid and use more wine or chicken broth...the reserve liquid was too rich for me. 2. Add a T of lemon juice, garlic, onion or shallots and green onions for some extra flavor. I like this best served with egg noodles, but it's also good over pasta or rice!

Garlic Prime Rib

Best Chicken Salad Ever I

These is definitely a sweeter chicken salad and if that's what you're looking for you've found the recipe! I used chopped rotisserie chicken instead of canned and would highly recommend that if you can. I used Kraft Mayo with Olive Oil instead of Miracle Whip. I found it a little dry so I added another tablespoon of mayo as well as a tablespoon of apple cider vinegar. Would be great served with pita bread or as a sandwich. Can't wait to finish the rest for lunch tomorrow!

Restaurant Style Egg Drop Soup

I did as another reviewer suggested and used fresh ginger. Next time I will add the eggs after adding the cornstarch as they did puff up, but all in all this was super yummy and easy to make. Thanks!
