Whit's Chicken Enchiladas

Fabulous recipe, easy and the filling comes together so well - I was worried about the cream cheese, cheese and water mixture being a big sloppy mess but it was great! I did use enchilada sauce in the pan for dipping the tortillas in and over the top followed by cheese and heavy cream. Whew! Big hit! Filling and made enough for an army! Works well with a rotisserie chicken! Great timesaver.

Quick and Easy Chicken Noodle Soup

Fantastic recipe! I took a tip from a reviewer and added a whole rotisserie chicken in the broth/veggie mix for 20 minutes, removed, took off bone and added back to soup. Fabulous flavor! Tossed in a bay leaf as well...really nice soup and reheats well too!

Quinoa Tabbouleh

This is my first recipe made with quinoa - YUM! I love it! I did not have all the ingredients for this recipe but what I did have was leftover pico de gallo which was very similar to what this recipe calls for. Cucumbers, tomatoes, olive oil, onions, salt, jalapenos, limes and pepper. Just a lovely combination of things. Great recipe, although slightly modified I'm sure the original is even better!

Cherry Chicken Lettuce Wraps

WOW! These caught me completely off guard! I trying to use up lettuce, carrots and some chicken and thought it would be fun to try to make something similar to the P.F. Chang's Lettuce Wraps...and well..these are dang close! I did only give 4 stars because I followed the advice of a previous poster and omitted/increased a few things. I did not have cherries nor would I have made it with them. I did double the vinegar and teriyaki sauce added about 1/2 tsp of Garlic Powder, chili flakes (suggested by previous poster) 1 tsp of veggie oil (I did not have canola) 4 chicken breasts boiled and cut into chuncks...considered shredding. Served in crispy lettuce cups. Again...D'lish!!! I was so surprised by the flavor and know that even with a few ingredients missing (green onions) it was still very tasty and not bland at all.

Berries 'N' Cream

This is one of my new FAVORITE sweeties! We dip the strawberries in the sour cream then roll them in the brown sugar. So naughty but so good!!! A must...even if it sounds a little strange you will be hooked! Thanks for sharing!

Very Berry Muffins

My husband and I loved these muffins so much that they did not make it to his office for this team brunch! Yes, that good! Like previous reviewers I did increase the sugar and add a little vanilla and nutmeg. They were perfect! I used a frozen berry mix from Costco (blueberries, raspberries and marion berries). 4 stars was given only because some modifications had to be made but the end result was 5 stars for sure! -VT
